Paleo Protein Pizza
When I get a hankering for protein and pizza at the same time, the hankering comes on strong and doesn't go away. The craving always comes at a time when I'm starving, hangry, motivated, and annoyed all at the same time. I played scavenger hunt with my fridge and dug out all the things I could find to make this fantasy a reality. Then, I grabbed my spiralizer and went to town on all the veggies.
What you'll need:
- Organic Yukon Gold and Red Potatoes
- 4-stalks of organic celery
- 1-cup of organic shredded carrots
- 1/2 a red onion
- 4-organic eggs
- 4-strips of organic bacon
- A Spiralizer and two frying pans (You can find Spiralizers cheap on Amazon.)
- Spices of choice (I used Trader Joe's Seasoning Salute, basil, and oregano.)
Step 1: Cook your bacon in a frying pan over medium heat. Don't over cook your bacon! And make sure to save your bacon grease. Don't throw away your bacon grease as it can be used for so many things when cooking, You'll also want to save two tablespoons of it for your hash. Set cooked bacon and bacon grease aside.
Step 2: Spiralize your potatoes and chop your celery and onions and mix together.
Step 3: Grab your second frying pan and cook your potatoes, celery, carrots, and onions over medium-high heat in two tablespoons of bacon grease.
Step 4: Once your hash is cooked thoroughly, crack 4-eggs over the hash and place your cooked bacon pieces around your hash to create the "crust" around the pizza.
Step 5: Cover and cook on low for 5-minutes.
Step 6: Add cilantro or fresh herb of choice and cut pizza into "slices" Your pizza should keep in the fridge for 3-days.
