Arugula Egg Pizza Featuring Eggland's Best

Can you guys believe we are nearly at the end of February? Where does the time go? Can we have a time machine, please? Personally, I'd like to go back to the age of nineteen where I paid little to no rent and barely had any bills. Okay, not really but adulting is hard. Am I right? Not to worry though friends, because I've got a delicious recipe to get you through those tough adulting days and some tips on how to keep your momentum going strong into Spring. 

First off, let's talk about eggs! Some people have a strange misconception about eggs that simply isn't true. Eggs are protein, packed little powerhouses and they are so good for our bodies! I make it a point to eat 1 egg every single day, even when I'm traveling. Eggland's Best eggs take their eggilicious game even higher! They are loaded with 10x the Vitamin E of regular eggs, have 25% less saturated fat, more than double the Omega 3-'s of regular eggs, and 6x more Vitamin-D, they also have double the amount of Vitamin B-12 which is essential for energy production. These eggs are little powerhouse gems! I always buy the organic, cage-free version because those are my jam and I want the hens to get as much sunshine and fresh air as possible.

Alright, let's get back to this recipe. You guys know how much I love pizza. I mean I LOVE pizza! I may or may not eat it at least once a week...just sayin. So why not create a pizza that has eggs on top! Well, I did just that with my Arugula Egg Pizza. This pizza has it all, protein, veggies, and it's made on Naan Bread which is a healthier bread option. Have you guys ever tried eggs on pizza before? Because if you haven't I'm telling you, you are missing out! I prefer my yolks to be runny always, so I cooked the eggs on the pizza just long enough to have the yolks drizzle all over the toppings and I have to say, that was a good choice. This pizza is super easy to make and also makes a fantastic breakfast pizza!

It's nearly March, I know, I know, crazy right? Are you guys keeping your momentum up throughout the new year? It's still technically, sort of a new year right? Well, if you need some extra motivation to keep things moving and grooving, I've got some tips below that should help you, and a healthy recipe you can eat along with them!

1. Self-Care is key. I talk about this a lot on this blog. Self-care is key. We work our butt's off day in and day out to be kind, strong, healthy, powerful, helpful women and we need to be spending some R and R time on ourselves. Take a hot bath, fill up the tub with eucalyptus and lavender oil. Run that salt lamp, buy yourself some super cozy pajamas. Take some time out and do a quick yoga session. And remember, you can't give your best if you don't feel your best, so self-care is key.

2. Exercise- Exercise does wonders for our bodies and more importantly our mental state. We need to be getting those endorphins up and get our blood moving. Not only is exercise good for our hearts (super important!) but it's good for our brains too. Get up and get moving. Start your day with movement and you will feel a million times better. I personally love lifting weights and running and I try to do both daily as much as possible. 

3. Turmeric face mask-Save your money and make a turmeric face mask at home, along with some hot turmeric milk and Netflix and chill. Relaxing never felt so good or looked so yellow. ;-)

4. Repeat this mantra daily: "I am loved. I am healthy. I am kind. I am strong." Repeat it while you work, while you eat, while you are getting ready, in the car, at yoga class, or do a complete 5-minute meditation with it when you first wake up in the morning. Have this mantra ready on repeat anytime you feel stressed. 

5. Shower mantra: Here's another mantra, "I wash away the negative aspects of the day, I envelop the positive aspects of today." If you get anxious in the shower like I do, this mantra can do wonders for you! It's relaxing, gives your mind something to focus on, and let's you really enjoy that hot water and bubbles. It's also known as positive reinforcement. Reinforcing the positive and releasing the negative.

Arugula Egg Pizza

Ingredients
  • 2 whole slices Naan Bread
  • 1 cup tomato sauce
  • 2 cups organic shredded cheese
  • 1/4 cup organic pepperoni
  • 1/4 cup organic sliced olives
  • 2 2 Eggland's Best Eggs
  • 1 cup Fresh organic arugula
  • 1 teaspoon sea salt
Instructions
Preheat oven to 350-degrees Spread pizza sauce on naan bread then add shredded cheeseNext, add your toppings then place the pizza in the oven at 350-degrees for 15 minutes. Don't overcook the pizza! After the pizza has cooked most of the way through, carefully crack one to two eggs on each pizza and cook for another 10-minutes or until you see the opaque part of the egg turn white. Top with fresh arugula and enjoy!
