Easy Healthy Stir-fry
Do you guys ever have those nights where cooking is the last thing on your mind? I know I do. Don't fret, because I have an easy, healthy, delicious recipe that literally takes 20-minutes to make and is super easy. We actually make it once a week in my house and sometimes swap out the beef for chicken. If you are vegetarian you can use tofu or if you are a meat eater, you can really spice it up by adding shrimp too!
This recipe calls for grass-fed beef, pineapple, and stir-fry veggies. You can pick up a package of stir-fry veggies from Costco in the frozen section or from Trader Joe's. You can also use fresh veggies, but for this recipe, I actually recommend using frozen veggies, as it makes the consistency better for the stir-fry. I know that may sound weird to you guys since I'm all about fresh everything on here, but trust me, opt for frozen veggies.
Simmer everything together over medium-high heat and start with EVOO. When my hubby makes this recipe, he uses butter, but I prefer EVOO. Really, either one will do just fine and will cook the flank steak the same way. I also use fresh chopped ginger and fresh chopped garlic. I actually get the pre-cut and peeled garlic gloves from Trader Joe's in the fresh veggie section just to make my life easier. Buy them! They'll save you so much time.
I also make fresh Jasmin rice to pair with the stir-fry. You can also pick this up from Trader Joe's and it literally only takes 5-minutes to make and is way better and better tasting than traditional rice. I love rice and could literally eat it every day so I never say no to rice.
I added fresh pineapple to this recipe because I love pineapple, especially in a stir-fry but know that it's completely optional.

- 1 cup Extra Virgin Olive Oil
- 1 pound Grass-fed Flank Steak
