The Best Roasted Cauliflower

Cauliflower is on shelves now in grocery stores in all different colors and ready for roasting!  This dish literally takes less than 5-minutes to prepare and about 12-minutes to roast up. Add cauliflower to your grocery list and make this dish tonight! 

I don't know about you, but the first I do when I hit the grocery store is head straight for the vegetable aisle. It's no secret that I LOVE veggies. I especially love cruciferous veggies like broccoli and cauliflower. Did you know that Cruciferous veggies help balance your hormones naturally and work to relieve excess estrogen from the body? This is especially beneficial if you are currently wanting to have a baby or are thinking about starting a family in the future. Cruciferous veggies also boost your fiber intake and help rid your body of unnecessary toxins. They have been also been proven to decrease certain cancers due to their anti-inflammatory benefits. They are truly the wonder vegetable and should be consumed regularly for optimal health.

My favorite cruciferous veggies are cauliflower and broccoli. I try and eat about 4-6 cups per day. No joke! I love roasting my veggies in big batches using fresh herbs and spices and roasting them at 350-degrees for about 10-12 minutes. You never want to overcook your veggies or else you'll lose out on all of the amazing health benefits they have to offer! People make the mistake over boiling them as well. Well not to worry because I have a hack for you for boiling perfect veggies. Take a double-broiler (I'll list once below in case you want to purchase one) fill it up about halfway with water and then add your veggies to the colander. Bring the water to a boil and once the heat starts to rise, turn it off and let the veggies boil on there own without the added heat from the oven. Let them sit for 5-minutes and then take the double-broiler top off, and your veggies are done! It's super easy and they literally take no time to cook.

For today's recipe, we are roasting the cauliflower and it couldn't be easier. All you'll need are fresh herbs (I used cilantro) and spices of choice. I used sea-salt, freshly ground black pepper, onion salt, and some garlic salt. You can use whatever spices you want, get creative with it! I think, the more spices, the better! You will also need two heads of cauliflower and as you can see I used orange cauliflower and purple cauliflower. These are not dyed! They naturally come in these colors. Did you know they also have green cauliflower?

Also, no need to buy organic in cauliflower, as it's one of the least sprayed veggies. You can go by the dirty dozen rule for this and check out this article which I've linked for you here. No need to waste your hard earned money on certain organic veggies when they are the least sprayed. Make sure to check the article out and read about why there is no need to purchase certain foods like avocados and cauliflower organic.

Now, let's roast this cauliflower! First, take a baking sheet and spray evenly with avocado oil. Cut the cauliflower heads into florets and spread them evenly on a prepared baking sheet. Next, drizzle on EVOO and balsamic vinegar onto the florets. Sprinkle any spices you prefer and pop the cauliflower into the oven at 350-degrees for 10-12 minutes. Don't over bake the cauliflower!

Makes: 4-6 servings

  • 2 heads of cauliflower, any variety
  • 1 cup fresh chopped cilantro
  • ¼ cup Extra Virgin Olive Oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon of garlic salt and flakey sea-salt
  • 1 teaspoon of onion salt
  • 1 teaspoon of freshly ground black pepper

  1. Preheat your oven to 350-degrees and spray a baking sheet with avocado oil.
  2. Take the cauliflower heads and cut them into florets. Make sure to remove the stems first.
  3. Drizzle the cauliflower with EVOO and balsamic vinegar then season the cauliflower with fresh cilantro, sea-salt, and spices of choice.
  4. Roast for 10-12 minutes at 350-degrees until the cauliflower is crispy.
