Everyone loves a good brownie every now and again. What if I told you these gooey brownies are gluten-free refined sugar-free, and dairy-free? These chocolaty, moist, delicious brownies will cure any chocolate craving and will send your chocolate sense into overdrive. Make this easy, healthy dessert for a yummy treat all week long!

Have you guys read the book, The Magic Art of Tidying Up? If you haven’t then I’m sure you’ve seen the new show all over Netflix so I won’t go into much detail, but basically that’s what I’ve been doing the last 27-days of January. I’ve been tidying up my house like it’s not a trend. Getting rid of stuff is serious business. I started with our kitchen which was the easiest room to do probably because I use it for work so much. Then, I started with my office/studio and that took a long time. I’m talking weeks. To be honest, I’m still overhauling the office. Everything is done and furniture is put into it’s assigned places, but I still have boxes of papers to go through and plastic tubs of old photos, memories, and stuff I’m not ready to face yet. Kondo states we should only keep photos that spark joy within us and I get that, but being a photographer, that motto goes against every fiber of my being.

But after re-reading the photos and memorabilia section in her book several times It makes sense to let go of the photos that no longer fill us up. I want to only keep the memories that really take me back to a magical time. Those photos will be added to a beautiful scrap book that I can share with my children and all the rest, it’s time to thank them, release them and let them go. This past weekend, I spent 3-days working on our garage. There were tons of things to sort through, most of it was trash, and the rest is donate. I only kept the things that make sense for what we want to turn the garage into, which is a functioning photo/workout space. Our home was built in the 1904’s and the garage was an add on, meaning it’s more of a make shift garage and not a real garage garage. It’s build out of wood and has no walls or installation. That’s about to change though and the initial process of all of this was to clean it out, next the plan is to gut it, and then, start over. I’m hoping to have part of this huge project done by February because we started it years ago and then never finished it.

My goal for the first half of 2019 is to finish all of the unfinished projects. Kind of like the song, Taking Care of Business. All of these things that got left behind, I want to finish them and have the projects finally complete so I can move onto new projects. I’m not a big fan of feeling stuck and lately things have felt stuck in our home with all of the loss and how 2018 kicked our butts.

It’s time to let go of the past, move on, and finish the unfinished things. Do you have any big house projects or big house goals that you want to finally wrap up? If so, I’d love to hear about it. These gluten-free brownies are made with walnut oil, rather than vegetable oil. Stay away from vegetable oil if you can, it’s really not healthy for our bodies. Walnut Oil makes a wonderful alternative for any recipes that call for vegetable oil.

The best part about these brownies is that they are made without any refined sugar and are made with Cacao powder and melted dark chocolate. I added in some unsweetened coconut in and on top of the brownies to really give them that crispy topping. For the flour, I’ve used coconut flour instead of regular flour.

These chocolaty, moist, delicious brownies will cure any chocolate craving and will send your chocolate sense into overdrive. Make this easy, healthy dessert for a yummy treat all week long!

Serves: 4-6

Ingredients:
  • 2-cups of melted unsweetened bakers dark chocolate
  • 1 ½-cup of walnut oil
  • 2-tablespoons melted coconut oil
  • 3-eggs
  • 1-tablespoon vanilla extract
  • 1/2-teaspoon Aluminum-free baking powder
  • 1-cup coconut sugar
  • 1-tablespoon cacao powder
  • 1-cup coconut sugar
  • 2-cups coconut flour
  • 1-cups unsweetened shredded coconut flakes
  • 1-scoop Divine Healthy Coconut Keto Powder, optional

Instructions:
  1. Preheat the oven to 325°F.
  2. Melt the chocolate and coconut oil on low heat in a double broiler on the stove in a glass bowl, stirring frequently until all of the chocolate has melted. Let the chocolate cool for a few minutes after melting.
  3. In a medium mixing bowl, add the walnut oil, coconut oil, eggs, melted chocolate, and vanilla extract, and stir until combined.
  4. Next, mix in the baking powder, coconut sugar, cacao powder, coconut flour, shredded coconut, and the MCT Oil powder and combine until mixed. The batter should be slightly lumpy.
  5. In a greased baking pan, pour in the brownie batter and top with more shredded coconut.
  6. Bake at 325°F for 30-minutes or until a toothpick inserted into the center of the brownies comes out with a few moist crumbs sticking to it. Let the brownies cool completely in the pan. Once the brownies are cooled, flip them over onto a cookie rack and flip back over to cut into squares and serve. Store at room temperature in an glass airtight container for up to 5-days.
  7. Sprinkle with additional shredded coconut, if desired.
