Healthier Shamrock Shakes

Love those famous Shamrock Shakes from Mc Donald’s but want a healthier, elevated version? I’ve got you covered with my Healthier Shamrock Shakes. What have I gotten myself into? That was the first thought that came to my mind when I woke up this morning. We adopted a German Sheppard. Let me rephrase that, a 2-year-old German Sheppard and oh my, I’ve had dogs all of my life, but German Sheppard’s are a whole other level. The back-story to how we got Lincoln (that’s his name, Lincoln. Well Link, after a character in Zelda, but that name doesn’t fit him. He’s much more of a Lincoln, you know like Abraham Lincoln. I already have nicknames for him, like Lincoln Log. So I’m already getting attached, but to be honest I’m not sure I can handle this. My cats are terrified of him, except James, because she’s a beast and she can handle anything. And Roxy and Marilyn are sort of tolerating him, but he’s not Harley so it’s an adjustment for sure.

I know it will simply take time. Everything takes time. The back-story to how we got Lincoln was his former family couldn’t handle him anymore. They just didn’t have the space for him; so much so that he was sent to the garage every day and no dog should be cooped up all day, especially a German Sheppard. He’s a ton of work. I’m not putting that lightly at all. I mean, 24/7 round the clock work. I know that this will take time and that we will adjust, but I’m concerned. Roxy and I run together and that’s been our daily flow for as long as I can remember. I’m not sure how to incorporate Lincoln into that since I’ve never run with two dogs before.

People are warning me left and right on Instagram not to run both of them together, but that seems really silly and extreme to me. I mean at first of course, we need to find our jam, but long term, I agreed to take on Lincoln so that he could be a running partner to Roxy. For now, I’ll run them one at a time and then slowly load them all into the car at once and run them together. Honestly though, I think running them both together right away is the best way, but if anyone has and advice on this, please send it my way. I’m new to owning a German Sheppard and open to all of the helpful advice.

We will find our way. I’m giving it a week to really see how things go and then I’ll take it from there. One hour at a time. I also believe this is wonderful training for parenthood which I’m more than ready for so the more of this, the better.

Can you guys believe it’s already the middle of March? How is that possible? Saint Patrick’s Day is almost here. I love Saint Patty’s Day! Everyone is crabby from Daylight Saving’s time, but I’m the opposite. I LOVE daylight savings time because you know what more light means? More light means, longer runs and more time outside which I’m all about. Another reason why it’s essential for all of us to find our groove, because summer is coming and I’m over the moon for all the sunny days and longer nights! Daylight saving’s time also forces me to wake up earlier. Even though we lose an hour of sleep, I wake up earlier and more refreshed.

My motto is find the silver lining in everything so even though this season brings up a lot of hard days and reminders of when Harley was diagnosed, it also brings a renewal and a refresher which we all need. And Lincoln does that too. He is certainly a breath of fresh air.

Speaking of a breath of fresh air, my Healthier Shamrock Shakes will do that for you too! These are similar to Mc Donald’s version, but a million times healthier and tastier. You can make these totally dairy-free by swapping the ice cream for coconut ice cream. I used fresh mint as well as peppermint oil and I really love the complexity it gives this milkshake.

Healthier Shamrock Shakes

They are made with fresh mint, peppermint oil, and rich ice cream. They are also loaded with fresh spinach and a scoop of Collagen Peptides for additional protein. Serves: 2-4

Ingredients:
  • 2-cups organic spinach
  • 1-cup unsweetened coconut milk
  • 1-teaspoon organic peppermint oil
  • 1-avocoado, halved and pitted
  • 1-bunch of organic, fresh mint
  • 3-scoops of organic vanilla ice cream (sub in coconut ice cream if dairy free.)
  • 2-scoops of collagen peptides
  • 1-tablespoon of coconut butter
  • 1-teaspoon honey, use as much sweetener as you prefer.
  • 1-cup of ice
  • Instructions:
    1. Place all of the ingredients in the blender and blend on high for 5-minutes. Give the fresh mint leaves times to blend into the smoothie. Use a blender spoon throughout the blending process.
    2. Pour the Shamrock Shakes in tall glasses and top with dark chocolate chips and garnish with more fresh mint leaves.
