I’ve created an easy no-bake snack featuring Windstone Farms Peanut Butter Packets. My No-Bake Peanut Butter Energy Balls are made with 5-ingredients and are delicious and great for taking with you on-the-go! Windstone Farms Peanut Butter Packets are naturally gluten-free and so are my No Bake Peanut Butter Energy Balls. All you’ll need for this recipe is Windstone Farms Peanut Butter Packets, rolled oats, honey, cacao powder, and unsweetened shredded coconut.

No-bake energy balls are super easy to make! The best part is that you don’t even need to turn your oven on. I suggest using a high-powered stand mixer for this recipe, but a large mixing bowl and a good whisk will work too. For this recipe, you’ll need 2-cups of rolled oats, peanut butter, honey, cacao powder, and unsweetened shredded coconut for the coating on the energy balls.

First, add the rolled oats to the stand mixer or mixing bowl and then add the peanut butter, honey, and cacao powder. The cacao powder gives these energy balls a light chocolaty flavor and it mixes well with the peanut butter. Mix on the medium setting for 2-minutes or hand mix for 5-minutes until the oats are coated. Take a spoonful of the prepared energy balls batter and roll it into a 1-inch ball. Repeat this step until all of the dough is used up. Place the prepared energy balls on a lined baking sheet and stash them in the freezer to firm up while you prep the shredded coconut.

For the unsweetened shredded coconut, you will need a food processor and another lined baking sheet. Take 1-cup of shredded coconut and add it to the food processor and pulse on the high setting for about 1-minute. Once the coconut is processed into smaller pieces, pour the shredded coconut on the lined baking sheet. Remove the energy balls from the freezer and take each one and roll it onto the shredded coconut. The shredded coconut gives the Peanut Butter Energy Balls a lightly sweetened coating that’s slightly crunchy when you bite into one. The no-bake peanut butter energy balls are now ready to eat! You can stash them in baggies and take them with you on the go!

That’s it! These no bake peanut butter energy balls can be made in less than 15-minutes and will keep in the fridge in an airtight, glass container for up to one week. If you want to make these for food prep, you can also store them in the freezer and they should last for a long time. Simply, remove them from freezer and let them thaw at room temperature when you are ready to eat them.
