Step 1: Preheat the oven to 350 degrees and line a baking sheet with parchment paper or silicone liner.
Step 2: In a large mixing bowl, combine the melted butter and light brown sugar.
Step 3: Next, add the two large eggs with egg yolk, pumpkin puree, and vanilla extract and mix well.
Step 4: Now add the dry ingredients: Add the flour, sea salt, and baking powder to the wet ingredients and mix everything well.
The pumpkin cookie batter should be nice and thick.
Step 5: Gently fold in the butterscotch chips and the chocolate chips into the cookie batter.
Step 6: Using a cookie dough scooper, scoop the cookie batter into 1-inch cookie dough balls onto the prepared baking sheet.
Step 7: Bake the pumpkin puree cookie sat 350 degrees for 20 minutes. Don't overbake the cookies, if you do they won't be chewy. If you have the patience, wait for the cookies to get too room temperature before diving in.
