It’s freezing in the mornings and it’s dark in Cali until at-least 7 am. My plants are unhappy that there is no sun in sight and everyone feels a little more down than usual. The winter blue are a very real thing and studies have shown that people can become more depressed in the winter now more than ever before. With rising statistics on people spending more time on their phone screens than with other people in real life, it seems like we are getting less face to face interaction than ever before. Especially in the winter, when people don’t feel like driving in the rain or getting out of their comfy, warm bed in the mornings.
While I do think winter is needed and necessary (and hallelujah for all the rain Cali has been getting) I do sort of hate winter and I do get the winter blues. Everything feels a bit darker in the wintertime, things move more slowly, and it seems we are just coming out of the holidays and into the New Year even though we are almost in February. I do take the wintertime to re-align all of my goals and check in with myself. I think it’s important to take this time and write everything down, our goals, intentions, and check in with ourselves. Are we eating the right foods? Are we getting outside? Are we exercising enough? Am I taking the best care of myself that I possibly can? And here’s a really big one: Am I getting enough sleep? The wintertime can be a great time of reflection and look at what’s ahead. I know that I have a lot of huge projects that I’ve been working on and I’m gearing up for Spring! I cannot wait for all of the sunshine and time spent outside. Although I do make it a point to opt outside nearly every day (rain or shine) I do feel that Springtime is just one of the best times of the year! Everyone put their cold-weather clothes way and out come the shorts and all of the outdoor adventures.
Shane and I had a trip planned to Kauai for this February, but low and behold some unexpected financial setbacks came up and we had to cancel. I have full faith though that we will get our trip to Kauai sooner rather than later. Do you guys have any big trips planned for this winter? Any big Valentine’s Day plans? I’ve got a lot of fun content coming to the blog for Valentine’s Day that I’m super excited about!
In other news, I’m also re-launching my YouTube channel! So there won’t just be videos of me making stuff with my hands. It’s going to be a new cooking/talk show episodes every week! And hey, if I get really good on YouTube like I’m planning, I will be posting two new videos every week! Hooray for sticking to New Year’s intentions and for keeping our goals moving forward!
Well since the winter blues are a real thing and since eating healthy, easy meals are at the forefront of everyone’s mind, I’ve created this delicious, vibrant, Citrus Salad for you guys! I’ve used nearly every citrus variation out there including Pomelos and Blood Oranges! Make this salad any day of the week for any meal. You can make a giant salad like I did and have leftovers that will keep in a glass container in the fridge for a good few days as long as you keep the dressing on the side.
Also, be sure and check out my easy, homemade dressing in this recipe. Toodles storebought dressings that are full of preservatives and refined oils. We don’t need em with my easy, homemade dressing.
