Cashew Chocolate Dream Protein Smoothie

When I think of peanut butter and chocolate, I immediately think of a creamy, delicious smoothie and this one fits the bill! Summer time is in full swing here in California with over 100-degree days taking over July and this is just the smoothie I want after my long trail runs. It's easy to make, packed with protein and healthy fats, and is a healthier option than a chocolate shake. Although those are good too!

This smoothie is made with nut butters so if you have a nut allergy then this is not the smoothie for you. This smoothie is also made with coconut milk which can be swapped out with almond milk or regular milk if that's your jam! I do my best to be mostly dairy free mainly because milk messes me up, but if you love milk then use that instead. 

The cashews do not need to be soaked overnight beforehand, but if you could make this smoothie extra-extra awesome and soak the cashews overnight and use the milk from the cashews in your smoothie. That does take time though and this is a quick post-workout smoothie so that is totally an extra step. I've provided instructions for two smoothies in this recipe, but if you are making this for the whole family simply double the ingredients!

You can find unsweetened cacao powder at Trader Joe's or on Amazon. There is a difference between cocoa and cacao powder. Notice the spelling difference? Cacao powder is what you'll need for this smoothie. It's unsweetened and won't make your sugar levels crash, but it still helps give the smoothies that velvety, chocolatey taste.

Melt the butters beforehand and this smoothie will come out super thick and creamy, similar to a milkshake. If you want a less thick smoothie, use less ice. The honey is completely optional as well. I like a hint of sweetness to my smoothies, but some people find it odd to add honey to smoothies. Remember, honey is really good for you and full of antioxidants. It also helps with allergies if you buy a local version.

Cashew Chocolate Protein Smoothie

By: Genevieve Jerome, July 21, 2018 This easy, dreamy smoothie is the perfect drink for summer. It’s creamy, packed with protein, and is the perfect drink for summer!

Makes: 2 servings

Name of image (title of post is fine)

Prep time: 5 mins

Cook time: 2-3 minutes

Ingredients:

  • 1 cup of ice
  • 8 chunks of unsweetened frozen coconut
  • 2 tablespoons of unsalted cashews
  • 1 teaspoon of coconut oil
  • ¼ cup of organic peanut butter (unsweetened)
  • 1 tablespoon of cacao powder
  • ½ cup melted almond butter
  • 1 banana
  • 1-2 scoops of protein powder of choice
  • 1 teaspoon of honey
  • ½ cup of unsweetened coconut milk
  • ¼ cup of iced coffee

Instructions:

  1. Place all of the ingredients into a high powered blender and blend on high for 2-3 minutes.
  2. Pour smoothie into two glasses and enjoy!
