Most people hear the word chili and think complicated and long. Not to fret my friends, my Easy Thirty Minute Pumpkin Chili is just that, easy. It can be made in under thirty minutes, using healthy ingredients. You can put anything into chili really, but I’m using the hearty veggies and pumpkin puree to fuel my easy chili that’s perfect for a chilly autumn evening. We cook the chili in a Dutch Oven to get all of the delicious flavors to simmer together. You can use a slow cooker to make your chili too, but I want fast and easy when I make chili, and using a Dutch Oven still get’s all the delicious flavors in a fraction of the time.
For my delicious thirty-minute pumpkin chili, we use organic ground beef, black beans, and red beans, fresh carrots, celery, Spanish olives, red bell peppers, onion, garlic, and fresh tomatoes. I also added some tomato sauce to make the chili nice and thick. This is seriously one of the easiest chili recipes out there. I like to keep things as simple as possible here.
So today I made a big decision and although it was time and it’s been time for a few months now, it still threw me off my game a bit. But as the infamous Tom Petty says: It’s time to move on. I’m happy to be able to blog full time and make this blog bigger and better than ever before. It can be hard to let go of the past, but when you know you know and I know that this is the right time. Everything is lining up the way that it’s supposed to and I’m happy to be able to devote my time to this blog full time.
