I remember as a kid being so excited about Halloween because of one candy in particular. And that candy, of course, being Candy Corn! This brings me into a famous childhood Halloween memory that I have to share with you guys. For any middle school friends who read my blog, you guys may remember this too. And this may give you all a laugh on this gorgeous, sunny, 80-degrees Thursday in Northern California.
I insisted to my mother that I be a cat for Halloween. I mean, I had to replicate our house cat Purr and insisted even more on having a long black tail. Despite my mom warning me that having a long tail attached to my Halloween costume may not be the best idea in the world, I begged and begged and she made me one. This tail was an epic tail. It was windy and long, and furry and I could wrap it around my entire body, which is super cool to a third grader running around town with her friends on Halloween. My friends and I went trick or treating, and my Dad (along with some other parents) was to chaperone us on our trick or treating adventures. So we are all dressed up, going from house to house, when we get to this one house with a huge crack in the sidewalk. My dad warned me. And warned me. And warned me some more. "Don't go running through the crack, Genevieve!" Well...me being the obstinate third grander that I was at the time, I ran and my epic tail ran with me. And indeed I tripped over my long, epic tail, and tripped right over the crack, causing all of my beloved candy to go flying everywhere, along with my cat ears, and my pride. I sobbed and cried, and my friends helped picked me up, along with my dad mumbling something along the lines of "I told you so." I never ran up to a door again while trick or treating after that horrendous fall. I walked and worried less about the candy and more about the state of my costume. Oh, the Halloween memories!
Isn't candy corn just the best, most delicious, sweet, addictive candy on the planet? I've found you either love candy corn, or you hate it. There is really no in-between. I'm one of those people who adore it, and will forever love it despite the fact that your average, store-bought candy corn has one ingredient that I do my best to stay away from at all costs. And that's corn syrup. Since I'm working on my graduate degree in nutrition, let's take a look at why corn syrup is bad for you. Not only does corn syrup cause your blood sugar to plummet hours after ingesting it, but it's addictive. Super addictive. Hence the reason why candy corn is just so good. Never to fear though my fine friends, because my job here at Fitty Foodlicious is to make you guys healthier alternatives of your favorite foods. Now, while I have not perfected "clean candy corn" just yet, I have perfected the smoothie version of it!
This candy corn smoothie is easy to make and filled with a ton of nutritious goodies. We've got Vital Protein's collagen for extra protein, ginger to boost immunity and combat the common cold, turmeric to help fight inflammation, coconut to help keep your skin glowing and clear, and tons of pumpkin. Did you guys know it's National Pumpkin Day? A day where I can write and eat all the pumpkin?! Yes, please!
Let's talk about all the amazing benefits from eating pumpkin every day. Pumpkin does not get the credit it deserves. Since it's just a popular food to use around the holidays, it's a food that gets forgotten post-Christmas. Do you know how awesome pumpkin truly is? Pumpkin has fiber, potassium, Vitamin A, beta-carotene, and helps keep your skin wrinkle-free and your immune a fighting, powerful machine. I add pumpkin to everything and I never get tired of it. I add it to my bulletproof coffee, to mac-and-cheese (recipe coming your way on that soon!) to my epic pumpkin collagen bars which can be accessed here, and it well face-cream and coconut oil for an epic face mask. Basically, it's life and it should be consumed as much as possible.
- Layer 1 Yellow Layer
- 1 cup Pineapple Juice
- 1 cup Frozen Coconut Chunks
- 1 teaspoon Fresh Ginger
- 1 cup Frozen Pineapple
- 1 whole banana
- 1 teaspoon Black Pepper
- 1 tablespoon Turmeric
- Layer 2 Orange Layer
- 1 cup Carrots
- ½ cup Frozen Cauliflower Rice
- 1 cup Pumpkin Puree
- 1 cup Tangerine Juice
- 1-tbs Honey
- Layer 3 White Layer
- 1 cup Frozen Coconut Chunks
- 1 cup Organic Whole Milk Yogurt
- 1 cup Almond/Coconut Milk (Unsweetened)
- 1 teaspoon Fresh Ginger
- 1 tablespoon Coconut Butter
You can place the layer's in any order you want. I placed them in the order of candy corn standing up with the white portion being at the top and then I also switched the layers around to make it fun!Freeze each layer as you make them. This will help the layers stay separate from each other when you place them into the glass. Carefully spoon each later into the glass, beginning with the yellow layer first, then the orange layer, and lastly the white layer.
