    Healthy-Ish Strawberry Collagen Shortcake Bars

    We usually have plans on the Fourth of July weekend. We are typically on the road exploring new places with no key destination in site. I'm really good at the spontaneous: "Let's go camping!" trips and we rally together and pack last minute snacks, corral our doggies, and hit the road. That's not happening this year though and I have to admit I'm not so good at staying home. Even though I'm technically doing a "staycation" in my hometown, I'm terrible at it. I keep making the epic mistake of going on social media and eyeing everyone's fun posts when what I really should be doing is relaxing. Relaxing? Yeah, that's a good joke! Moving on. I published these beauties on IG the other day and the video has taken off! These Healthy-Ish Strawberry Collagen Shortcake Bars will send you to your knees. Literally! They are delicious, creamy, rich, and you want to know what the best part is? They won't send you into a sugar crash later on in the day. You can eat these for breakfast with a side of hot coffee or pair them with some delicious coconut cream iced coffee. 




    While coming up with the recipe for these delicious Strawberry Collagen Bars, I was worried they would not turn out right without the use of refined sugar. But thanks to Vital Protein's Collagen Peptides and Coconut Sugar, these bars taste better than the original sugar-lad version. I've been taking Vital Proteins Collage Peptides for over a year now and I'm in love. My skin stays hydrated, I have higher energy levels, and my muscles recover faster after a workout. The scars on my skin are healing quickly, and I feel like I look good even if I didn't get a great night's sleep. I also have more muscle mass and look defined and strong.     This recipe is called healthy-ish because it's cleaner than your fuller versions of strawberry shortcake and it's made with coconut sugar rather than refined sugar. It also uses half the butter that the OG recipe uses. So without further ado, let's get baking shall we? 

    Preheat oven to 350-degreees. 

    Grease loaf pan (I use coconut oil spray for mine) 

    Make sure you have a Kitchen Aid Mixer or a mixing bowl and egg beaters as these are both required to make the shortcake. 

    Ingredients: 

    1-cup of organic coconut sugar

    ½-cup of organic grass-fed butter

    Vital Proteins Collagen Peptides

    2-organice eggs

    2-tbs of organic bourbon vanilla extract

    1.5 cups of organic flour or coconut flour

    ¾-teaspoon of organic baking powder

    ½-cup of organic half-n-half or coconut milk (your choice!)

    ½-tsp of Himalayan sea salt

    Recipe Steps:

    Cream butter and sugar together 

    Next, add the eggs and mix all ingredients together 

    Once everything is combined, Add the collagen peptides, organic flour, vanilla extract, sea salt, and baking powder, mix on the medium setting.

    While everything is mixing, slowly add the heavy cream. 

    Once everything is combined, pour mixture into a greased loaf pan.   

    Cook at 350-degrees for 30-minutes, and make sure to keep an eye on it while it's baking. To make sure it's done, take a fork and poke it gently through the top. You'll know it's done when the fork is clear. 

    Let cool for 30-minutes, slice, and then top these yummy bars with organic sliced strawberries, and homemade whip cream that also uses Vital Proteins Collagen Peptides.
