When she brought out pates of rice with heaping piles of gorgeous bright yellow and orange chicken curry I was immediately hooked.
Chicken curry has such a vibrant smell and is a total comfort food. Have you ever made chicken curry with bone broth? You literally add everything to the Dutch oven and let it simmer away. And before you know it, you’ve got a delicious dinner on your hands. I added rainbow bell peppers, chopped garlic, and used fresh basil as a garnish. The fresh basil really makes all of the flavors pop! You could also add broccoli, zucchini, and squash.

One Pot Chicken And Rice Curry

My One Pot Chicken and Rice Curry is easy to make, dairy-free, full of protein and veggies, and is wonderful to make as a food prep meal. All you need for this recipe is a Dutch oven, chicken, rice, and some fresh ingredients for the easiest weeknight meal ever!

Ingredients:
- 2-tablespoons Extra Virgin Olive Oil
- 1-cup diced red onion
- 1-teaspoon fresh chopped ginger
- ½-cup chopped celery
- 1-pound organic chicken tenders
- 1-cup chopped rainbow bell pepper or red bell pepper
- 2-scopps LonoLife Thai Curry Bone Broth
- 1-teaspoon each of Himalayan sea-salt and black pepper
- 3-cups water
- 1-teaspoon curry powder
- 1-cup coconut milk
- 4-cups uncooked Jasmine rice
- ½-cup chopped fresh basil for garnish.
Instructions:
- In a Dutch oven on the stovetop over medium heat, add the EVOO, chopped red onion and ginger and simmer for one minute.
- Add the chicken and celery to the Dutch oven and stir until the chicken starts to turn white.
- Add the bell pepper, Himalayan sea-salt and black pepper, and stir again, simmer for another minute.
- Add the LonoLife Thai Curry Bone Broth and stir.
- Next, add 3-cups of water to the Dutch oven and stir continuously until everything is combined.
- Add the curry powder and coconut milk and stir.
- Next, slowly fold in the uncooked Jasmine rice and stir. Cover the Dutch oven and let the chicken and rice curry simmer over medium-low heat on the stovetop for up to one hour or until the chicken and rice is nice and thick.
- Garnish with fresh basil, optional.
