LET’S MAKE THE PERFECT BURRITO
Today, I wanted to share with you one of my hubby’s recipes. Yes, he cooks too. This recipe is his Carne Asada Burritos and they are so good! Simple to make, super filling, and I’ve added a boost of veggies for even more delicious goodness. Shane makes his burritos different than most, by frying them. Never fried a burrito before? I can tell you that once you make these, you’ll be frying every burrito you make at home from now on.
A GOOD, QUALITY MEAT MAKES ALL THE DIFFERENCE
Let’s dive into the ingredients list first. You’ll need Carne Asada for these burritos. I purchased it fresh from my local butcher. You’ll also need Jasmin rice, I like to buy Jasmin Rice in bulk from Trader Joe’s. You will also need tricolored bell peppers, black olives, spinach or leafy greens of joins, fresh cilantro, and shredded sharp cheddar cheese. I’ve included a photo tutorial on how to assemble the burritos. You can fry the burritos in cooking oil of choice, but I recommend using butter so that the burritos don’t take on the flavor of the oil. Fry the burritos for 1 to two minutes on each side until they are nice and crispy. Frying the burritos gives them a nice crispy and crunchy texture which we like for our burritos.
LAYERS UPON LAYERS OF DELICIOUSNESS
The best thing about these Carne Asada Burritos is that they make wonderful leftovers. Simply make them the night before and leave out the frying part. Or you can fry them and they will still make fantastic leftovers. Wrap the burritos in a paper towel and place them in a glass airtight container in the fridge. Reheat them in the oven and you have delicious leftovers.
I love easy recipes, but what I love even more is having approachable recipes where you can make leftovers with the next day. This way you are getting two meals in one and more for your money. I think we could all use a little more money in our back pocket, don’t you?
The weekend is nearly here! Do you have any big plans this weekend? I’m pumped because we are headed to the coast and going to my favorite coffee shop to restock. We have been out of coffee for a few weeks now and let me just say that it’s getting pretty desperate in our household. I made old coffee from old coffee grounds the other day (they weren’t used but they weren’t fresh) and the results were pretty dismal. I’m excited to head off to the beach and enjoy some much-needed vitamin-D.
