Muddle the fresh thyme and mint in your cocktail glass
Fill the cocktail glass with ice. Pour a shot of gin into each glass and a squeeze of fresh lime juice.
Add the fresh pineapple juice and fresh squeezed orange juice (don't use orange juice concentrate, the drink won't taste right)
Top off with coconut and sparkling water. Garnish with a wedge of lime to the rim of the glass and more fresh mint sprigs and fresh thyme. Sip and enjoy!
