Gin and Pineapple Juice is a refreshing gin garden cocktail that's perfect for summer! Using fresh herbs from the garden like mint and thyme, fresh squeezed pineapple juice, fresh squeezed orange juice, gin, coconut water, and sparkling water, this is the ultimate summer cocktail! You can even make it a pineapple mocktail, simply leave out the gin. So sit back, relax, and enjoy this pineapple juice cocktail.

Ingredients
  

  • Fresh Mint
  • Fresh Thyme
  • Ice
  • 1 tablespoon lime juice
  • 1 shot Gin
  • 1 part fresh pineapple juice
  • 1 part fresh squeezed orange juice
  • 1 splash Coconut Water
  • ¼ Sparkling Water
  • Wedge of lime

Instructions
 

  • Muddle the fresh thyme and mint in your cocktail glass
  • Fill the cocktail glass with ice. Pour a shot of gin into each glass and a squeeze of fresh lime juice.
  • Add the fresh pineapple juice and fresh squeezed orange juice (don't use orange juice concentrate, the drink won't taste right)
  • Top off with coconut and sparkling water. Garnish with a wedge of lime to the rim of the glass and more fresh mint sprigs and fresh thyme. Sip and enjoy!
