Chewy Pumpkin Cookies are the chewiest and most delicious chocolate chip pumpkin cookies. All you need for this pumpkin cookie recipe is chocolate chips butterscotch chips, pumpkin puree, flour, eggs, and brown sugar. This one-bowl chewy pumpkin cookies recipe is quick, easy, and perfect for fall!

Ingredients
  

  • ¾ cup melted butter
  • 1 cup light brown sugar
  • 2 large eggs
  • ½ cup pumpkin puree
  • 1 tablespoon vanilla extract
  • 2-½ cups flour
  • 1 teaspoon sea-salt
  • 2 teaspoon baking powder
  • 1 bag butterscotch chips
  • 1 bag chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper or silicone liner.
  • In a large mixing bowl, combine the melted butter and light brown sugar.
  • Next, add the two large eggs with egg yolk, pumpkin puree, and vanilla extract and mix well. 
  • Now add the dry ingredients: Add the flour, sea salt, and baking powder to the wet ingredients and mix everything well.
  • Gently fold in the butterscotch chips and the chocolate chips into the cookie batter.
  • Scoop the cookie batter into 1-inch cookie dough balls onto the prepared baking sheet.
  • Bake the pumpkin puree cookie sat 350 degrees for 20 minutes. Don't overbake the cookies, if you do they won't be chewy.

🎃 Substitutions For Pumpkin Spiced Cookies
    • Instead of flour you can use rolled oats and turn these into delicious chewy pumpkin oatmeal cookies I've made both versions and they are both delightful!
    • If you don't have baking powder, don't worry! A teaspoon baking soda will do in a pinch.
    • Want to turn these into a pumpkin snickerdoodle cookie? Add cinnamon sugar mixture to the cookie batter. Yum!
