Easy Crispy Cornflake Cookies For Valentine's Day

Easy Crispy Cornflake Cookies are the perfect treat for Valentine's Day! Made with cornflakes, mini marshmallows, pink food coloring, and a heart-shaped cookie cutter, these are the heart-shaped Valentine's cookies you'll come back to all year long!   • Prep Step: Link a baking sheet with parchment paper. Set a quarter of a stick of butter aside. We will use this later on in the recipe.
  • Melt one stick of butter in a saucepan over medium heat.
  • Add a 16 ounces bag of mini marshmallows (use the entire bag) and mix well into the butter until well combined.
  • Remove the melted marshmallows from heat, and add the pink food coloring ½ teaspoon at a time, and keep adding the pink food coloring until the marshmallows turn the pink you want. I love this brand because it contains no artificial dyes.
  • In a large bowl, add four cups of cornflakes, and add the melted marshmallows, and mix until well combined.
  • On a baking sheet lined with parchment paper, spread the cornflake cookie batter until smooth.
  • Rub butter all over your hands. This will make forming your crispy cornflake cookies easier and the cornflake cereal won't stick to your hands. Take the heart-shaped cookie cutter and press the cookie cutter into the batter. You can mold the hearts with your fingers if needed.
  • Add the Valentine's Day sprinkles and press the M&M's into the cookies. Let the chewy cornflake cookies cool or refrigerate for 15 minutes before serving. Serve and enjoy!

    • You can add white chocolate chips or semisweet chocolate chips to this take these famous cookies up a notch! Turn these into chocolate chip corn flake cookies.
    • Try adding in peanut butter or Nutella to make these delicious easy cookies even creamier!
    • These crunchy cookies are the perfect combination of sweet and savory with this taste from the crunchy cornflakes and the sweetness that comes from the marshmallow cookie batter.

  • How do I keep the Cornflakes cereal from sticking to my hands?
    • Rub your hands with that extra butter mentioned earlier. It will help make the cookies easier to shape and mold into hearts and the marshmallow won't stick to your hands.
    Can you freeze cookies?
    • Freezing: While you can freeze certain cookies, you don't want to freeze heart-shaped cornflake cookies; they will be soggy and won't taste right.
    • Storing: These chewy cookies are best kept at room temperature in an airtight container or Ziploc bag.
