CHOCOLATE ORANGE LOAF CAKE

Ingredients
  

  • 2 cups flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 2 tablespoon melted butter
  • 1 tablespoon melted coconut oil
  • 1 cup orange juice
  • 1 tablespoon orange oil
  • 4 tbsp grated Mandarin orange zest, divided.
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350-degrees F
  • In a stand mixer, combine the flour, sugar, baking powder, and salt.
  • Add the eggs, butter, coconut oil, orange juice, vanilla, orange oil, and reserved Mandarin orange zest and mix on the low setting until combined.
  • Fold in chocolate chips.
  • Pour into an 8x4-in. loaf pan lined with parchment paper. 
  • Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. 
  • Cool for 10 minutes before removing from pan to a wire rack. Add more mandarin orange zest to the top of the loaf cake. 

Notes

You can make this cake over the weekend and enjoy it all week long!
Freeze it, the orange juice loaf cake will last even longer.
Pro Tip: I like to make two batches. One for the family to enjoy throughout the week and the other for us to feast on later.
