Love those famous Shamrock Shakes from Mc Donald’s but want a healthier, elevated version? I’ve got you covered with my Healthier Shamrock Shakes. They are made with fresh mint, peppermint oil, and rich ice cream. They are also loaded with fresh spinach and a scoop of Collagen Peptides for additional protein.   • 2 c Organic spinach
  • 1 c Unsweeted coconut milk
  • 1 tsp Organic peppermint oil
  • 1 tsp Vanilla extract
  • 1 Avocado, halved & pitted
  • 1 bunch Organic, fresh mint
  • 3 scoops organic vanilla ice cream (sub in coconut ice cream if dairy-free.)
  • 2 scoops collagen peptides
  • 1 tbsp coconut butter
  • 1 tsp  honey use as much sweetener as you prefer.
  • 1 c Ice


  • Place all of the ingredients in the blender and blend on high for 5-minutes. Give the fresh mint leaves times to blend into the smoothie. Use a blender spoon throughout the blending process.
  • Pour the Shamrock Shakes in tall glasses and top with dark chocolate chips and garnish with more fresh mint leaves.
