BLT Pasta is the ultimate comfort food and the best part is it takes less than 20-minutes to make. And yes it tastes just like the classic BLT Sandwich. Made with freshly cooked bacon, arugula, cherry tomatoes, penne pasta, and fresh Parmesan cheese, this is one pasta recipe you don’t want to miss!

Ingredients
  

  • 1 box Penne
  • ½ lb Bacon chopped & cooked
  • ½ c White onion chopped
  • 2 c Heavy cream
  • 2 c Freshly grated parmesan
  • 1 Tomato chopped or 1 c cherry tomatoes
  • ¼ c Lemon Juice fresh
  • 2 c Arugula
  • Himalayan sea salt and black pepper

Instructions
 

  • Cook the penne pasta according to package directions
  • Saute the chopped bacon and white onion together until cooked thoroughly 
  • Add the heavy cream and 1-cup parmesan to the bacon and onion and saute on low heat for 5-minutes or until the sauce starts to thicken.
  • Add in the chopped tomatoes
  • Add in the fresh lemon juice
  • Toss in the penne pasta and combine
  • Toss in the arugula
  • Add more parmesan and combine.
  • Serve immediately 
  • Garnish with Himalayan sea salt and freshly ground black pepper
