Instructions
Preheat the oven to 350-degrees and line a muffin tin with liners.
First make the cream cheese mixture by mixing the cream cheese, egg, vanilla extract, and brown sugar over medium speed until combined.
In a large bowl, mix together the flour, brown sugar, baking powder, salt, pumpkin spice, cinnamon, and nutmeg.
Add the eggs, coconut oil, pumpkin puree, and vanilla extract to the dry ingredients and mix well until combined.
For the streusel topping, using a fork mix the butter, flour, and sugar until it forms a crumbly topping.
To the muffin tin, add the batter ½ way and then add the cream cheese mixture. Repeat these steps until the muffin tins are full to the top. Add more cream cheese topping to the tops of the muffins and then sprinkle on the streusel topping.
Bake the muffins for 20-25 minutes at 350-degrees.
