Strawberry Turnovers

Strawberry Turnovers with Piecrust are the easiest turnovers to make. Made with puff pasty, fresh strawberries, egg, cream cheese, sugar, and lemon, these strawberry cream cheese turnovers are going to be an easy summer dessert recipe that you come back to again and again!

Ingredients
  

  • 1 pound fresh strawberries, hulled and halved
  • 1 package Thawed puff pastry
  • 1 brick cream cheese, softened
  • 2 large eggs, reserve one for egg wash
  • ¼ cup Sugar
  • 1 tablespoon Vanilla Extract
  • 1 lemon juiced and zested

Instructions
 

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicone baking mat.
  • Wash, hull and slice the strawberries into quarters or halves.
  • Now we are going to make our "puff pastry boat" for the asparagus to sit in. Lay puff pastry out on the prepared baking sheet. Fold edges up to create a ½-inch wide border. Prick the inside base of dough completely with a fork
  • Bake in the preheated oven until golden and puffed, about 10 minutes. Press the puffed center down with the back of a fork to deflate. 
  • In a stand mixer, add the softened cream cheese, tablespoon vanilla extract, egg, and sugar. Mix on the low setting until well combined. 
  • Add in the lemon zest and mix again filling is creamy and smooth. 
  • Carefully pour a layer of the strawberry turnover filling homemade strawberry filling evenly into pastry shell  You can also add a top layer of lemon zest. This makes the strawberry turnovers even tastier.
  • Arrange berries cut side down, you can alternate these as well. After a layer of strawberries is placed on the prepared puff pastry, you are ready to bake on the lined baking sheet.
  • Brush eggwash on the sides of the puff pastry. This will ensure the dough is nice and golden brown.
  • Bake in a preheated oven at 400 degrees for 15 minutes or until the sides of the phyllo dough is flaky puff pastry. Let cook for 10 minutes before slicing.

The best way to store strawberry turnovers phyllo dough is to store in a glass airtight container on the kitchen counter for up to two days. If you store them in the fridge, the puff pasty can dry out. Make you enjoy these fruit pastry filling recipe in two days or freeze.
Pro Tips for strawberry and cream cheese turnovers: You can also make these strawberry pastries with strawberry rhubarb turnovers for an extra tart treat!
If you want these really, really sweet, you can add a cup powdered sugar (but I don't suggest it) these are sweet enough on their own and healthier without the added sugar.
