Mini Pumpkin Pancakes are the cutest fall breakfast recipe and they taste delicious. These healthy easy mini pumpkin pancakes are fluffy, buttery, and take less than 15 minutes to prepare. Ingredients
  

  • 1 ½ cups All purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoon pumpkin pie spice
  • 1 quarter cup brown sugar
  • ¼ teaspoon himalayan sea salt
  • 2 large eggs
  • 1 cup whole milk
  • 1 quarter cup heavy cream
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • ¼ cup melted butter

Instructions
 

  • Preheat Mini Waffle Maker according to package directions and melt the butter in a saucepan on the stovetop.
  • In a large mixing bowl, add the flour, baking powder, pumpkin pie spice, and sugar and combine.
  • Add the wet ingredients to the dry ingredients. Add the milk, heavy cream, butter, vanilla extract, and eggs.
  • Whisk the batter well until combined. The batter should be slightly lumpy and fluffy texture.
  • Coat the preheated waffle iron with cooking spray on each side. Drop batter 3 tablespoons of batter into preheated mini waffle maker and cook until the waffle is cooked through and golden brown. This should take about 5-6 minutes per pancake. This batter makes about 15 mini pumpkin pancakes.
  • Once pancakes are done, transfer to a plate and add more butter, a drizzle of syrup, and top with fresh whipped cream and more pumpkin pie spice for that delicious pumpkin pie flavor!

Notes

🥞 Pro Tip For The Best Pumpkin Pancakes
  • Add chocolate chips and turn these into a sweet pumpkin treat!
  • Don't over-mix your pancake waffle batter. It should be slightly lumpy for best result.
  • Don't have a Dash Mini Pumpkin Waffle Maker? No big deal at all! This recipe will still make silverdollar pancakes, pumpkin pancakes, they just don't be in the shape of a pumpkin.
  • You could use a pumpkin cookie cutter though and get the same effect!
