Brew your espresso or strong coffee of choice (you can pull two shots of espresso if using an espresso machine, or 1-cup of brewed coffee)
In a saucepan on the stovetop or a milk frother, combine the cookie butter, molasses, honey, vanilla extract, cardamom powder, pumpkin spice, and cinnamon over low heat until well combined and a gingerbread syrup forms. Add the milk and simmer over low heat. Don't curdle or boil the milk!
Add the espresso or strong brew coffee to a coffee mug, next add the prepared gingerbread latte syrup and milk, and stir until well combined.
Add all the Christmas toppings! Top with homemade whipped cream (or storebought whip cream, I won't judge you) add marshmallows, Christmas sprinkles, and nutmeg powder. Add a gingerbread house mug hugger for added Christmas cheer (this last step is optional)
