Pizza Gnocchi is a cheesy pepperoni skillet that's a perfect weeknight meal idea! Preheat oven to 350-degrees and set a baking sheet aside.
Shred half of the Mozzarella and slice the other half into thin slices.
Heat olive oil in a large skillet over medium high heat. Add in the fresh garlic and chopped red onion and saute for 2-3 minutes until the onion is transluscent.
Add the gnocchi and sear over medium heat for 2-3 minutes. Repeat until all sides are golden and crisp.
Stir in the marinara sauce and pizza seasoning coating the gnocchi and stir until combined.
Add the shredded half of the Mozzarella cheese and layer it on top of the prepared gnocchi and then add in some pepperoni slices.
Take the Mozzarella slices and place them on top of the gnocchi and layer in the remaining pepperoni slices. Top with remaining shredded Mozzarella cheese.
Place the prepared skillet on a baking sheet and bake in the oven at 350-degrees for 5-7 minutes until cheese starts to bubble.
Switch to the broil setting for 3-minutes and bake until the cheese is crispy golden brown. Don't over broil! Serve immediately while the cheese pull is at peak drama!
