Cheesy Gnocchi And Marinara Skillet

Gnocchi Marinara is the perfect fall pasta recipe that's easy to whip in less than 15 minutes. This pan-fried pumpkin gnocchi pasta dish is made with fresh marinara sauce, pumpkin puree, fresh parmesan cheese, fresh garlic and onion, and potato gnocchi. This is one easy pasta recipe that will be on repeat in your house!

Ingredients
  

  • 1 package storebought or homemade gnocchi
  • ¼ chopped red onion or yellow onion
  • 1 tablespoon chopped fresh garlic gloves
  • 1 cup pumpkin puree
  • 1 jar Marinara sauce
  • 1 bunch fresh basil
  • 2 cups freshly grated parmesan cheese
  • Salt and black pepper to taste

Instructions
 

  • In a medium saucepan add the EVOO, chopped onions, and garlic and sauté until the onions are translucent.
  • Add the fresh tomato sauce and the pumpkin puree and simmer over medium heat for 10 minutes.
  • While the sauce for the gnocchi is simmering, boil the pot of water. Add the salt to the water and bring the salted water to a boil. Add the store-bought gnocchi to the boiling water. Set a timer and boil the gnocchi for 3 minutes. You’ll know the gnocchi is ready when it floats to the top.
  • Remove the gnocchi from the water and add it to the simmering sauce in the hot skillet over medium heat. Simmer the pasta and sauce together for an additional 3-5 minutes. Add fresh black pepper and sea salt.
  • Add the fresh basil and fresh parmesan cheese to the skillet and mix well.
  • Add the prepared gnocchi to bowls and top with more fresh basil, black pepper, and Parmesan cheese and enjoy!
