🍨 Ingredients For Smores Ice Cream Bars – Marshmallow fluff or marshmallow creme – Vanilla bean ice cream – Crunchy Graham Crackers (cinnamon graham crackers make this recipe extra special) – Chocolate Chips – Sea Salt
Step 1: Lay out the graham crackers on a lined baking sheet. It's best to break each graham cracker in half and then spread the marshmallow cream on each half of the graham cracker squares.
Step 2: Spread a 1-inch layer of creamy ice cream ( vanilla bean or vanilla ice cream) over the marshmallow layer halves and top with the other graham cracker. Stash the graham cracker sandwiches in the freezer while you melt the chocolate.
Step 3 Melt the Chocolate: Add the chocolate chips to a glass bowl and add coconut oil.
Step 4: Fill a medium saucepan with two inches of water. and bring water to a boil. Place the glass bowl on top of the pan so that it fits snugly, but doesn't touch the water Lower the heat and simmer on low. Continue to stir the chocolate until it melts.
Step 5: Remove the Graham cracker ice cream sandwiches from the freezer and dip each one into the melted chocolate, working quickly here. It helps to have a lined baking sheet with parchment paper for this part. Place each chocolate-dipped S'more ice cream sandwich onto the lined baking sheet and top with chunky sea salt. Refreeze them for one hour.
