It’s still reaching 90-degrees here during the day and Easy Slow-Cooker Chicken Tortilla Soup works wonderfully for this seasonal transition.
Can you believe we are already almost through September? This month is flying by! Fall is officially here and I’m ready for it. New season, new reasons to start new beginnings, and go with the flow of letting go which is what fall is all about. In the mornings, when I’m drinking my coffee on our deck, I watch the leaves slowly fall off the trees and I’m reminded how easy it is to actually let stuff go.
I also love fall because it’s every single excuse to decorate. I actually started decorating my house with pumpkins on Labor Day Weekend.
You know the video going around of the girl who sees one fall leaf fall to the ground and then she’s running around wearing scarves, buying PSL lattes, and decorating her house with all things fall? Yeah, that’s me.
Well, except for the warm clothes part, because it’s still reaching 90-degrees here in the afternoons.

Slow-Cooker Chicken Tortilla Soup is one you are going to want to make again and again. This is the perfect fall soup and super easy to make.
Most tortilla soup recipes have you cook the chicken first and then add it to the slow-cooker.
My version is simple. I add the chicken first thing into the slow-cooker along with the rest of the ingredients. No need to cook the chicken first as it cooks with the rest of the ingredients and talk about a timesaver. Easy-peazy, stress-free slow-cooker meal.
Easy Slow-Cooker Chicken Tortilla Soup is chock-full of fiber from the black beans and other veggies.
To add a zesty flavor to the soup, I also added enchilada sauce that I picked up from Trader Joe’s.
I love that it adds a lot of flavors, without it making it too spicy.
You could also make homemade tortilla chips to go along with this recipe, but I use store-bought ones because I wanted this recipe to be as easy as possible.
Most tortilla soup recipes have chicken stock, but for mine, I use chicken bone broth.
I find that bone broth makes it thicker and creamier, which I love. A hearty bowl of thick and creamy chicken tortilla soup is my kind of meal!

GIVE ME ALL THE FALL ACTIVITIES
I adore fall. Fall runs are the best. The air is crispy, and not as muggy. There is a refreshing scent in late September on the trails and you can actually run without sweating your face off. Roxy has an easier time on the trails too in the fall and Lincoln loves running in cooler weather. It’s nice to be able to open the windows at night instead of turning on the AC.
You guys should see my house, it’s pumpkins and corn stalks galore. We have a front door and a back door and I have hay-bails set up with pumpkins and scarecrows on it in the front and corn stalks wrapped around the beams on my porch and tons of pumpkins below them. My neighbors say my house looks like a pumpkin patch which, is exactly what I was going for.
Planting in the fall is wonderful too! The nursery has no lines, every plant is on sale, and mums are in season! I plan on heading to our local nursery this weekend to get all of the flowers. I’m re-doing our yard and I’m excited about the prospect of a new hobby that keeps my mind busy.

Easy Slow-Cooker Chicken Tortilla Soup
Ingredients
- 1- pound organic free-range chicken breasts
- 1- cup black beans
- 1- cup diced tomatoes
- 1- cup chopped celery
- 1- teaspoon fresh chopped garlic
- 2- tablespoons taco seasoning
- 1- tablespoon ground cumin
- 1- bunch fresh cilantro
- 1- cup enchilada sauce
- 2- cups chicken bone broth
- Tortilla chips sour cream, and sliced avocado for toppings. (Optional.)
Instructions
- Add the chicken breasts to the slow-cooker.
- Next, add the black beans, tomatoes celery, and chopped garlic over the chicken.
- Add the taco seasoning, ground cumin, cilantro and enchilada sauce.
- Pour in the chicken bone broth.
- Cook in the slowcooker for 5-hours. At the end of the cooking time, shred the chicken with two forks.
- Add the chicken tortilla soup to bowls and top with fresh avocado, sour cream, and tortilla chips. (Optional)
