    • ½ cup Cornmeal
    • 1 large Egg
    • ¼ cup Melted Butter
    • 2 tablespoon Chopped Fresh Chives (for topping)
    • ½ teaspoon Garlic Salt
    • ½ teaspoon Freshly Ground Black Pepper
    • ½ cup Sour Cream. for garnish
    • Additional Chopped Chives for Garnish

    • Place the grated yellow squash and grated onion in a large bowl. Sprinkle with 1 teaspoon of the sea salt and let sit for 10 minutes to draw out excess moisture.
    • Transfer the squash mixture to a clean kitchen towel or several layers of paper towels. Squeeze out as much liquid as possible.
    • In a large mixing bowl, combine the drained squash mixture, shredded cheddar cheese, flour, cornmeal, egg, melted butter, chopped chives, remaining sea salt, and black pepper. Mix until well combined.
    • Heat a large skillet over medium heat and lightly grease with oil or butter. Scoop the squash mixture into the skillet and gently flatten into fritter-shaped patties.
