    This homemade ratatouille recipe combines fresh zucchini, yellow squash, grey striped squash, tomatoes, onion, and a rich tomato sauce for a hearty summer dinner. Inspired by the traditional French dish, it’s an easy way to use fresh garden vegetables and pairs perfectly with crusty bread, grilled chicken, or a simple green salad.

    It's vegetable season and if you follow me on Instagram then you know I love growing my own veggies and I plant tomatoes, zucchini, and squash in bulk. I'm not kidding, I literally have a tomato jungle that towers over me and I just started more seeds last week to get another bumper crop of zucchini. I love growing my own vegetables. There is something so satisfying about being able to walk outside in your own garden, harvest your fresh veggies, and cook them for dinner. It's one of life's greatest pleasures!

    Prep Steps for the best Homemade Ratatouille

    • 🔪 Dice the yellow onion
    • 🧄 Finely chop the fresh garlic.
    • 🍅 Slice the cherry tomatoes in half.
    • 🥒 Slice the zucchini into ¼-inch rounds.
    • 💛 Slice the yellow squash into ¼-inch rounds.
    • 🌿 Slice the gray striped squash into ¼-inch rounds.
    • 🌱 Chop the fresh sage

    1. Step 1: Preheat your oven to 375°F. While the oven heats, cook the ground beef and chopped onion in a large skillet over medium heat until the beef is browned and the onion is tender. Drain any excess grease if needed.

    1. Step 2: Add the halved tomatoes and cook for 3–5 minutes until they begin to soften.

    • 1 pound lean ground beef
    • 4 teaspoon extra virgin olive oil, divided
    • ½ large Yellow onion, diced
    • 6 Garlic Cloves, finely chopped
    • 1 cup mixed cherry tomatoes (halved)
    • 1 24 oz Jar Marinara Sauce
    • 1 medium Zucchini, sliced into ¼-inch rounds
    • 1 medium yellow squash, sliced into ¼-inch rounds
    • 1 medium Grey Striped Squash, sliced into ¼-inch rounds
    • 6 fresh Sage leaves, chopped
    • 1 teaspoon Garlic Powder
    • 1 teaspoon Garlic Salt
    • 1 teaspoon Paprika
    • 1 teaspoon Freshly Ground Black Pepper
    • ½ teaspoon Himalayan Sea Salt
    • 1 cup Freshly grated Parmesan Cheese

    • Preheat you oven 375 Faranheit
    • In a large skillet over medium heat, cook the ground beef with the diced yellow onion until the beef is browned and the onion is tender. Drain any excess grease if needed.
    • Stir in the chopped garlic and halved cherry tomatoes. Cook for 3–5 minutes, allowing the tomatoes to soften.
    • Add the marinara sauce, chopped fresh sage, garlic powder, garlic salt, paprika, sea salt, and black pepper. Stir well and let the sauce simmer for about 5 minutes.
    • Spread the meat sauce evenly into a lightly greased baking dish.
    • Arrange the sliced zucchini, gray striped squash, and yellow squash in overlapping rows over the sauce. Drizzle with extra-virgin olive oil and season with a little additional salt and pepper, if desired.
    • Cover the baking dish tightly with aluminum foil and bake for 20–25 minutes, or until the vegetables begin to soften.
    • Remove the foil, sprinkle with freshly grated Parmesan cheese, and broil for 2–4 minutes, watching carefully, until the cheese is melted and lightly golden.
    • Let the ratatouille rest for 5–10 minutes before serving. Garnish with additional fresh sage or Parmesan cheese, if desired.
