    • 1 ½ pounds Green Tomatoes Sliced ¼-inch thick
    • 1 teaspoon Sea Salt
    • 2 teaspoon Freshly Ground Black Pepper
    • 1 cup All-Purpose Flour
    • 2 Large Eggs
    • 1 cup Buttermilk
    • 1 cup Cornmeal
    • 1 cup Extra-Virgin Olive Oil, for frying
    • Ranch Dressing for dipping sauce and serving

    Instructions
     

    • Slice the tomatoes. Slice the green tomatoes into even rounds, about ¼-inch thick.
    • Season the tomatoes. Arrange the tomato slices on a cutting board or baking sheet and season both sides with the sea salt and black pepper.
    • Set up the breading station. Add the flour to one shallow bowl. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine the cornmeal and breadcrumbs.
    • Bread the tomato slices. Working one slice at a time, coat each tomato in flour and shake off the excess. Dip it into the egg and buttermilk mixture, then coat both sides thoroughly in the cornmeal and breadcrumb mixture.
    • Heat the oil. Add the extra-virgin olive oil to a large skillet and heat over medium heat until hot.
    • Fry the green tomatoes. Working in batches so you don’t overcrowd the skillet, add the breaded tomato slices to the hot oil. Fry until golden brown and crispy on the first side, then flip and cook until the second side is golden and crisp.
    • Drain. Transfer the fried green tomatoes to a wire rack set over a baking sheet and allow the excess oil to drain. Repeat with the remaining tomato slices, adding a little more oil if needed.
    • Serve. Serve the fried green tomatoes warm with ranch dressing for dipping.
