👻 Ingredients for Classic Bruschetta Appetizer Recipe (Boo-Schetta Ghost Recipe)

What you'll need for Ingredients for Tomato Bruschetta
- Sourdough Baguette: I pick up a delicious rosemary garlic sourdough baguette from my local bakery and it's the best bread ever! Freshly made sourdough is always best if you can get it.
- Tomatoes: There's a lot of debate on the internet about which tomatoes are best for bruschetta. My attitude is if you have fresh garden tomatoes that you've grown yourself than those are the best ones. If you are buying tomatoes from the store then I suggest Roma tomatoes or Beefsteak tomatoes. The beefier the tomato, the better. 🙂
- Extra Virgin Olive Oil: Or as I like to call is, EVOO-use any good high-quality olive oil that you can find. Don't go cheap here.
- Red Wine Vinegar: Oh it's so good in homemade Bruschetta! Just do it, trust me, you won't regret it. It gives this Italian dip zing!
- Fresh Basil: You can make tomato bruschetta without using fresh basil. It's a rule, look it up! 😉
- Fresh Garlic: Garlic is life! You may ward off vampires after consuming this recipe. You'll need Garlic cloves and minced garlic for this recipe
- Sea-Salt: Baja sea-salt, or a high quality Himalayan sea-salt are your best options for this recipe.
- Freshly Ground Black Pepper: Black pepper makes this recipe a bit spicy and sends it over the top. Grind it fresh if you can. \
- Fresh Mozzarella: Buy the block of Mozzarella from the grocery store you can slice it and make your Halloween shapes cut-outs using cookie cutters.
- Balsamic Glaze: Balsamic Glaze makes the eyes on our bats, ghosts, witch hat shapes, but it's also delicious in bruschetta Italiana. You can also use Balsamic Vinegar.

👻 The Key to the Perfect Tomato Bruschetta

Prep Step: Preheat oven to 350-degrees and diced the tomatoes, basil, and mince the garlic. Set aside. Prepare a lined baking sheet. Unlined is fine too!

- Step 1: Slice the sourdough baguette and place on a baking sheet. Brush each slice with Extra Virgin Olive Oil and rub with a clove of garlic. This brings out the most flavor! Toast the baguette slices for 5-10 minutes until crispy.

- Step 2: In a bowl, combine the diced tomatoes, olive oil, and red wine vinegar and mix until combined.

- Step 3: Add the fresh chopped basil, minced garlic, sea-salt, black pepper, and balsamic glaze and mix again until well combined. Set that aside and let the flavors meld together while you prep your Mozzarella cheese ghost slices.

- Step 4: Slice the mozzarella cheese into thick slices and use the Halloween cookie cutters to make your Halloween shapes.

- Step 5: Spoon the prepared bruschetta tomato mixture over each toasted bread slice.

- Step 6: Top with your Mozzarella ghosts and make the eyes using the Balsamic Glaze, gently dot circles for the eyeballs and ghost face. Eat immediately and enjoy!

Tips!
Tips to prevent soggy Bruschetta because no one wants that!
- Make sure your bread is golden and firm all the way through, not just lightly toasted on the outside. A sturdier base won't soak up liquid as quickly.
- Rub, don't soak! Rub the bread with garlic before toasting, this gives is the best flavor! Trust me, don't skip this key step!
- After dicing the tomatoes you could also place them in a fine mesh strainer for 10-15 minutes to remove excess juices and add salt to draw out more liquid.
- Top the bread with the tomato mixture right before serving. This flavorful homemade bruschetta dish is best served and enjoy immediately!
- Brushing each slice of the sourdough baguette before it goes into the oven also ensures your bread will stay crispy and this will also keep it from getting soggy.

- 2 tablespoon Balsamic Vinegar
- 2 cloves garlic, minced plus 1 extra clove for rubbing bread
- Balsamic Glaze for making ghost eyes
- Fresh basil leaves, chopped
- 1 teaspoon freshly ground black pepper
- 1 teaspoon Himalayan sea-salt
- Sliced Mozarella
