Pumpkin Pie Filling
- Puff Pastry Sheets: ( 2-pack) make your own if you want, but store bought works great too and makes this recipe quick and easy!
- Pumpkin Puree: *try to use organic pumpkin if you can*
- Light Brown Sugar: Dark brown sugar works well here too. Try to avoid using white sugar as they won't taste right.
- Vanilla Extract: I like to use a high-quality Bourbon Extract, the real stuff. 😉
- Egg: 2-large eggs. Always use pastured raised open pasture eggs whenever you can. It's better for the chicken's quality of life! One is for the pumpkin pie filling and the other egg save for later, will use that for the egg-wash.
- Pumpkin Pie Spice: This popular fall staple is essential for these pumpkin pop tarts.
Maple Sugar Glaze
- Powdered Sugar: Did you know you can make powdered sugar from regular sugar simply by blending it? Yeah! It blew my mind too!
- Maple Syrup: Use a high-quality Grade maple syrup, don't go cheap on me now.
- Milk: This makes the maple frosting thick and delicious and you don't need much.

How to make the Best Pumpkin Pop Tarts
Prep Steps: Preheat oven to 350-degrees Fahrenheit and line a cooking sheet with parchment paper.

- Step 1: First make the maple sugar glaze. In stand mixer add the powdered sugar, milk, and maple syrup and mix well until the it turns into a thick frosting. The consistency should be thick but pourable. If it's too thin, add a bit more powdered sugar. If it's too thick, add more milk.This should take 2-3 minutes. Once that's done, set it aside.

- Step 2: In a large mixing bowl, add the pumpkin puree, brown sugar, pumpin pie spice, vanilla extract, and egg.

- Step 3: Mix the pumpkin pie filling well until thick and combined. No need to over mix.

- Step 4: Roll out the thawed puff pastry dough. Using a pizza dough cutter, slice the puff pastry into 4-large rectangles on each sheet. This should make 8-total rectangles, one for the bottom and top of the pop tarts. Place the bottom puff pastry rectangles on the lined cookie sheet.

- Step 5: Take a spoon and add a dollop of pumpkin filling to the center of the bottom puff pastry rectangle.

- Step 6: Seal the top crust: Carefully place the top rectangle on top of the pumpkin filled side and use a fork crimp the sides of the puff pastry together.

Next - Brush the prepared pop tarts with egg wash. This will ensure the pumpkin pie pop tarts turn out shiny, with a flaky crust and golden brown.

Sprinkle - the prepared Pumpkin Pop Tarts with more pumpkin spice and bake in the oven at 350-degrees for 40-minutes or until golden brown.
