Top Tip: How to Keep Pumpkin Hand Pies from Leaking
Don’t overfill your pumpkin pie hand pies! Add a small spoonful of pumpkin filling to the center of each puff pastry cutout, leaving enough room around the edges. Seal the edges firmly with a fork and cut a small vent in the top to allow steam to escape while baking. This helps prevent the pumpkin filling from spilling out in the oven.

Ingredients for Mini Pumpkin Pie Hand Pies with Puff Pastry
- 🥐 Puff Pastry: One sheet of store-bought puff pastry creates a buttery, flaky, golden crust without making dough from scratch.
- 🎃 Pumpkin Puree: Gives these mini pumpkin hand pies their rich pumpkin flavor and creamy pumpkin pie filling. Use pure pumpkin puree, not pumpkin pie filling.
- 🥚 Egg: Helps bind the pumpkin pie filling together and gives it a rich, custard-like texture.
- 🍦 Vanilla Extract: Enhances the pumpkin flavor and adds a touch of sweetness.
- 🍂 Brown Sugar: Adds sweetness and a warm, caramel-like flavor to the pumpkin filling.
- 🍁 Pumpkin Pie Spice: Adds classic fall flavors like cinnamon, ginger, and cloves.
- ✨ Nutmeg: Adds an extra layer of warm, aromatic spice that complements the pumpkin.
🎃 Pumpkin-Shaped Cookie Cutter
Use a pumpkin-shaped cookie cutter to create these adorable mini pumpkin pie hand pies. Cut an even number of puff pastry shapes so each hand pie has a top and bottom. Keep the puff pastry cold while working for the best flaky results.

Prep Steps for Perfect Pumpkin Hand Pies Recipe
Preheat the oven to 350°F (confirm temperature) and line a baking sheet with parchment paper. Keep the puff pastry refrigerated until you’re ready to cut and fill it so the dough stays cold and flaky.

Don't rush the cooling process!
These mini pumpkin pie hand pies puff up beautifully in the oven and naturally settle slightly as they cool. Let them rest on the baking sheet before handling so the flaky pastry can set and the warm pumpkin filling can firm up.

❄️ Freezer: Freeze completely cooled hand pies in a freezer-safe container for up to 2 months. Separate layers with parchment paper to prevent sticking.

That's a fun project to make with the leftovers of the pumpkin carvings, and to put the kids to work in the kitchen! Super nice idea.
