    How to Make Italian Tomato Passata at Home

    Using a slotted spoon, carefully transfer the blanched tomatoes to a large bowl of ice water. Let them cool for a few minutes, until they’re easy to handle.

    Remove the tomatoes from the ice bath and gently peel away the loosened skins. The skins should slip off easily after blanching. Discard the skins or add them to your compost.

    • Blanch the Tomatoes: Bring a large stock pot of water to a boil. Carefully add the tomatoes and blanch for 30–60 seconds, or until the skins begin to loosen and split.
    • Transfer to an Ice Bath: Using a slotted spoon, transfer the blanched tomatoes to a large bowl filled with ice water. Let them cool for a few minutes, until they’re easy to handle.
    • Peel the Tomatoes: Remove the tomatoes from the ice bath. Using your hands or a paring knife, gently peel away and discard the loosened skins.
    • Purée the Tomatoes: Add the peeled tomatoes to a blender and blend until smooth. For an even smoother Tomato Passata, strain the purée through a fine-mesh strainer or nut milk bag.
    • Store the Passata: Pour the Homemade Tomato Passata into reusable freezer-safe containers, leaving a little room at the top for expansion. Seal tightly and refrigerate for short-term use or freeze for longer storage. Thaw frozen Passata in the refrigerator before using.
