    No-Bake Protein Cookies

    In the days leading up to February and winter being (almost) over with, yay! We all need a little chocolate from time to time. And if I can get my chocolate fix with a little bit of protein added to the mix then that's even better! Lately, on my trail runs, I've been getting sugar drops after my runs and they are no fun, especially since I usually run errands after my trail runs. I don't like to waste money on eating out so having a snack post run is essential.

    My mind and body instantly feel better if I have a fast snack I can grab. And you guys seem to love all the snacks too so I thought I would throw this recipe up on the blog. I make these quite frequently and they are delicious and nutritious! These little powerhouse protein balls are also super easy to make and have two scoops of Collagen Peptides in them which comes out 20 grams total for the recipe. That's a good amount of collagen in each protein ball!

    Most people think that eating carbs directly after running or exercise is the right thing to do and it is (sort of) but really your body needs to replenish the protein lost during exercise. Make sure you get a nice combination of protein and carbs. That way you won't crash later and you'll feel full until your next meal. My no-bake protein cookies are also great right before your activity of choice and are low in sugar. While honey is considered a "sugar" our body utilize it differently than say eating refined sugar. I practically live on honey as it has so many health benefits. Local honey is the best option and is great for regulating your immune system, helping your body adapt so you have fewer allergens, i a wonderful purifier for your system, and it's even great to aid in fighting colds and digesting food. Don't be afraid of honey! It's really good for you!

    I've made these cookies with organic oats that I keep stocked in my pantry. Oats are best when eaten warm, but the oats in this recipe are raw. If your body has a hard time digesting oats (many people do) feel free to warm these cookies up in the oven for a few minutes before eating. Yes! These are no bake cookies, but for my digestive savvy friends, this is a trick that helps your tummy digest the oats a slower rate. I've also used fresh pumpkin seeds, which I rave about on here all of the time. Pumpkin seeds are so good for you! They help your hair, skin, and nails, they are full of potassium and iron and make the no bake cookies more filling. Don't skip the pumpkin seeds!

    I've also added unsweetened sunflower seed butter and organic peanut butter which make these no-bake cookies super creamy and give them the best flavor. Plus, I can't be the only one who can literally eats sunflower seed butter straight from the jar.....

    Make a big batch of my no bake protein cookies on a Sunday during food prep and store them in the fridge for up to a week. They will even last longer in an air-tight, glass container so you can make a big batch and nosh on them anytime you have a sweet craving or need a snack!

    • 2 cups Organic Oats
    • ½ cup Pumpkin Seeds
    • 2 scoops Vital Protein's Collagen Peptides
    • 1 teaspoon Himalayan Sea-Salt
    • 1 tablespoon Molasses
    • 4 tablespoons Organic Cacao Powder
    • 1 cup Melted Sunflower Seed Butter
    • ½ cup Peanut Butter
    • ¼ cup Honey
    • 1 tablespoon Coconut Butter
    • ⅓ cup Dark Chocolate Shavings
    • ¼ cup Organic Unsweetened Shredded Coconut

    InstructionsAdd the ingredients to a large mixing bowl until combinedNext, add the mixture to a Kitchen Aid Mixer or use an electric mixer and mix everything together on the medium setting until the cookie dough is nice and thickNext, grab a cookie sheet and place parchment paper over itWork the dough into 1-2 inch balls, (it will be sticky this is normal)Place each ball on the parchment paper on the cookie sheet and store in the fridge for up to 2-hoursThese will keep in a glass airtight container in the fridge for up to two weeks. Enjoy at your leisure!DetailsPrep time: 10 hourCook time: 15 hourTotal time: 25 minsYield: 8 servings
