I’ve been intimated by Chicken And Dumplings for quite a long time. I use to think that this recipe was so hard to make and the thought of the word dumplings freaked me out. That is until I realized just how easy Chicken and Dumplings are to make and that you can actually get a few store-bought items for this recipe and be good to go! All you need for this easy one-pot recipe is a slow cooker and a few key ingredients.
You can make your own homemade dumplings, but that’s a lot of work and when you are short on time and just want to get dinner on the table, it’s easier to buy store-bought biscuits. I picked up the Biscuit Grands and they worked like a charm. You’ll also need chicken breasts or chicken tenders, fresh carrots, celery, and onion, and frozen peas. Some people make chicken and dumplings without veggies, but It tastes way better with fresh veggies and it gives you a healthy serving of veggies that our bodies need. Make sure to add in any veggie variety that you prefer.
The first step is adding the chopped onion into the slow cooker. Next, you’ll add the chicken, chicken stock, cream of mushroom and chicken soup and cook the chicken until it’s fully cooked. This will take about 2-3 hours or less, depending on if you use chicken tenders. After the chicken is cooked, remove it from the slow-cooker and shred it using two forks. Once the chicken is shredded, add it back into the slow cooker and add in the rest of the veggies. You will also add in the dumplings at this point. Break up the biscuit dough and add the pieces to the chicken and dumplings mixture. Cover the slow cooker and cook for another and 1-2 hours.
A note about the biscuits. Mine took longer than an hour to cook in the slow cooker. If you don’t want the biscuits to turn out too gummy, then you can remove the chicken and dumplings from the slow cooker and add them to a baking dish and continue cooking them in the oven at 350-degrees for about 20-more minutes. This last step is completely optional and really depends on if you want your chicken and dumplings more crispy. I like my dumplings to be fully cooked, whereas Shane likes them a little on the doughy side. It’s completely up to you, but hopefully, my above recommendations help you.

You can store the chicken and dumplings in an airtight, glass container in the fridge.

Easy Slow Cooker Chicken And Dumplings

Ingredients:
- 1-white onion, chopped
- 1-pound organic chicken tenders or boneless, skinless chicken breasts
- 1-bay leaf
- Himalayan Sea-Salt and Black Pepper to taste
- 2-cans of Cream of Chicken and Mushroom Soup
- 2-stalks celery, chopped
- 4-large carrots, peeled and chopped
- 1-package of frozen peas, thawed
- 3-cloves garlic, minced
- 1-can of refrigerated biscuits
Instructions:
- Place the chopped onion in the slow cooker and top with the chicken. Sprinkle the chicken with sea-salt and black pepper.
- Pour over the Cream of Mushroom and Chicken Soup along with the chicken bone broth. Place the bay leaf on top of the chicken. Cover and cook on high until the chicken is cooked. This will take anywhere from 2-3 hours depending on if you use chicken tenders or chicken breasts.
- Discard the Bay Leaf and remove the chicken from the slow cooker and shred it with two forks. Place the chicken back into the slow cooker and stir in the celery, carrots, garlic, and peas. Cut the biscuits into small piece then stir in the chicken mixture. You can also spoon additional liquid on top of the biscuits. Cook on high until the vegetables are tender and the biscuits are cooked through. This will take an hour to and hour an half or longer. For crispier biscuits, cook the chicken and dumpling in the oven in a baking dish for 20-more minutes.
