This week has been a rough one friends. I had no idea how hard this baby making journey would be. I feel alone and somewhat lost, frustrated and sad. I've been distracted all week and haven't really been keeping up with anything, let alone my blog. I let everything fall by the wayside and have been so caught up in my own thoughts and alone and caught up in my own head. Hormones don't help any of this either and make everything seem way worse than it actually is. Sorry, I've been MIA on here guys, I really did not know all this would be so up and down and so much wondering and fear facing would ensue, but it has and we are here now and we must keep going and moving forward.

So let's start over and dive right into this delicious Chocolate Sea-Salt Cookies recipe. People think it's really hard to get cookies that are ooey gooey in the middle and crispy on the outside, but it's actually not hard at all. If you use the right ingredients and don't over bake them, your cookies will come out perfectly! I also recommend using baking chocolate for your chocolate chips rather than using chocolate chips. Grab a big bar of baking chocolate and chop up the chocolate yourself before you start baking your cookies. I suggest chopping up 2 cups worth because you want enough for the mix-ins and you want enough chocolate for the tops of your cookies.

I purchased my chunky sea-salt from Trader Joe's and I do think it's the best, but you can also find decent sea-salt on Amazon. Chunky sea-salt is key! Make sure you have it before you start baking your cookies. I also used cacao powder (not cocoa powder) which I also purchased from Trader Joe's, but I've also linked a good brand here for you. Make sure you have cacao powder and chunky sea-salt and you are good to go!

I have not made this recipe gluten-free and honestly, I'm not sure it would really work using almond flour, but if you are feeling frisky, do try it and come back and let me know how it turns out. Some recipes aren't meant to be gluten-free especially full fat, chocolate, cookies!

Comment below and let me know if you tried making this recipe and let me know what you guys think. These cookies are SO good and they lasted about a day in our house! Pretty surprising for having a hubby who doesn't like chocolate, but he actually ate the majority of them!
