Need an easy vegetarian meal that can be made in less than 45-minutes, and tastes delicious? I’ve got you covered with my easy Vegetarian Chorizo Sausage Stuffed Acorn Squash made with brown rice, red onion, pumpkin puree, thyme, and kale. This is one vegetarian meal you’ll want to make again and again!

Lately, Shane and I have been trying to do a meatless Monday meal every week. I’m not a huge meat eater, but I do find myself feeling the need to have it every time I make dinner mainly because it’s so versatile and easy to pair with other things. That is why I’m changing things around on our weekly dinner menu and adding a meatless option that’s still unique and just as versatile as meat is. These Chorizo Sausage Stuffed Acorn Squash are super simple to make and great for feeding the entire family! Simply, prep the squash by cutting them into halves, preheat the oven to 400-degrees and heat the squash face side down on a cookie sheet for 20-minutes. While the squash is roasting, prep the MorningStar Farms® Chorizo Crumbles, rice, kale, and onion. Saute the red onion and Chorizo Crumbles first, next, add the cooked brown rice, and add the kale. Saute everything together for 10-minutes until combined. Once the sausage mixture is ready, add it to the squash. Top with pumpkin puree and garnish with thyme sprigs and the acorn squash is ready to serve.
