These Chorizo Sausage Stuffed Acorn Squash are super simple to make and great for feeding the entire family! Simply, prep the squash by cutting them into halves, preheat the oven to 400-degrees and heat the squash face side down on a cookie sheet for 20-minutes. While the squash is roasting, prep the MorningStar Farms® Chorizo Crumbles, rice, kale, and onion. Saute the red onion and Chorizo Crumbles first, next, add the cooked brown rice, and add the kale. Saute everything together for 10-minutes until combined. Once the sausage mixture is ready, add it to the squash. Top with pumpkin puree and garnish with thyme sprigs and the acorn squash is ready to serve.
