Need an easy vegetarian meal that can be made in less than 45-minutes, and tastes delicious? I’ve got you covered with my easy Vegetarian Chorizo Sausage Stuffed Acorn Squash made with brown rice, red onion, pumpkin puree, thyme, and kale. This is one vegetarian meal you’ll want to make again and again!
Lately, Shane and I have been trying to do a meatless Monday meal every week. I’m not a huge meat eater, but I do find myself feeling the need to have it every time I make dinner mainly because it’s so versatile and easy to pair with other things. That is why I’m changing things around on our weekly dinner menu and adding a meatless option that’s still unique and just as versatile as meat is. MorningStar Farms® offers many vegetarian options that are supposed to mimic meat but do not have any animal by-products in them. Walmart carries new MorningStar Farms® Veggie Meal Starters in the frozen food section. They offer different varieties like Chorizo Crumbles, Italian Sausage Crumbles, Chipoltle Black Bean Crumbles and more.
The best part about MorningStar Farms® products is that they are and as-is meal solution. Meaning, you can add them to anything and turn them into a complete meal. MoringStar Farms® has been making vegetarian and plant-based meals that are meat-centric to satisfy everyone’s various tastes for over twenty years! MorningStar Farms® has an option for everyone and an array of unique products from chicken to bacon, to sausage to burgers that are all vegetarian-friendly.
My vegetarian Chorizo Sausage Stuffed Acorn Squash features
MorningStar Farms® Chorizo Crumbles™
brown rice, kale, red onion, pumpkin puree, and tyme. The great thing about MorningStar Farms® Chorizo Crumbles is that they are a plant-based veggie meal starter that’s wonderful for any meal. These are a vegetarian alternative to ground beef and are wonderful for meals like tacos, scrambled eggs, veggie sloppy joes and more! The Chorizo Crumbles are also a good source of protein and have 9 grams per serving which are 12% of daily your value. They are also cholesterol-free and low fat. These also make a wonderful and quick breakfast, lunch, and dinner option that is easy and convenient.
What I love about MorningStar Farms® Chorizo Crumbles™ is that they come in a convenient 16.2-ounce resealable bag which makes storing them easy. Stash the bags in the freezer until you are ready to use them.
These Chorizo Sausage Stuffed Acorn Squash are super simple to make and great for feeding the entire family! Simply, prep the squash by cutting them into halves, preheat the oven to 400-degrees and heat the squash face side down on a cookie sheet for 20-minutes. While the squash is roasting, prep the MorningStar Farms® Chorizo Crumbles, rice, kale, and onion. Saute the red onion and Chorizo Crumbles first, next, add the cooked brown rice, and add the kale. Saute everything together for 10-minutes until combined. Once the sausage mixture is ready, add it to the squash. Top with pumpkin puree and garnish with thyme sprigs and the acorn squash is ready to serve.
See the photos throughout this blog post for how to prep the acorn squash. This recipe is great because it’s an all-in-one meal that offers veggies, protein, carbs, and starch. The stuffed acorn squash also freezes well and can easily be reheated in the oven. You could also food prep this recipe to have it for lunch or dinner the next day.

That chorizo is my favorite! It's so close to actual chorizo. I love it!
Yum!! I've used Morningstar Chorizo before when I couldn't find ~real~ chorizo and totally fooled my meat-loving husband. It's legit!

This sounds delicious! I've never tried veggie chorizo but love finding meat alternatives that are just as good. Will have to hunt this down!

Aren't acorns simply the best?! I still have a couple to go through and roast. Thanks for sharing.
