- 12-14 medium fresh peaches, washed, pitted, and diced (skins left on)
- ½ cup granulated sugar
- ¼ cup Honey
- 1 Lemon (juice of 1 large lemon (2-2 tablespoons)

- Prepare the peaches. Wash the fresh peaches thoroughly, remove the pits, and dice them into bite-sized pieces, leaving the skins on.
- Combine the ingredients. Add the diced peaches, granulated sugar, honey, and fresh lemon juice to a large saucepan. Stir well until everything is evenly coated.
- Bring to a boil. Place the saucepan over medium heat and stir frequently until the sugar dissolves. Increase the heat and bring the mixture to a full rolling boil.
- Mash the peaches. Once the peaches begin to soften, use a potato masher to gently mash about half of the fruit, leaving plenty of larger chunks for texture.
- Simmer until thickened. Reduce the heat to low and cook for about 60 minutes, stirring often to prevent sticking, until the peach jam thickens to your desired consistency.
- Test the jam. Spoon a small amount onto a chilled plate or spoon that has been in the freezer for several minutes. Let it sit for 30–60 seconds. If the jam wrinkles slightly when pushed with your finger and doesn’t immediately run, it’s ready.
