This easy strawberry jam recipe is one you'll want to share! It's strawberry season so why not make your friends this easy homemade strawberry jam recipe and this truly makes the most delicious strawberry jam which makes a great gift!
🍓 How To Make Strawberry Jam At Home
Prep Step: Place a small plate in the freezer. Will use this later in the recipe.
- Step 1: Place the strawberries on a cutting board with the top facing down and use a paring knife to cut thin slices from one side of the strawberry to the other. You can also cut the strawberries into fours.
- Step 2: In a large mixing bowl, mash the strawberries using a potato masher until they become crushed strawberries.
- Step 3: Next add the freshly squeezed lemon juice to the mashed strawberries.
- Step 4: Add the white cane sugar to the strawberry, lemon zest, and lemon juice mixture and mix well until combined.
- Step 5: Transfer the strawberry mixture to a large saucepan or stockpot and stir over medium heat until sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Continue to boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). (Use a candy thermometer to check the temperature)
- Step 5 Continued: Use a candy thermometer to check doneness. If the homemade strawberry jam reaches 220 degrees F (105 degrees C) then it's ready. Let it continue to simmer for 10 minutes.
Step 7: Check the doneness of homemade strawbery jam after 10 to 15 minutes by dropping a small spoonful of jam onto a frozen plate. Let sit for 1 to 2 minutes; if the jam appears to gel, it is ready. Continue cooking if jam appears thin and runny.
Step 8: Transfer homemade strawberry jam into hot sterile jars, filling to within ¼ inch of the top. Top with lids and screw rings on tightly. (See Pro Tip card below for stealizing Jam Jars) Place your Strawberry Jam in the fridge for up to a week or enjoy right away!

- Water bath Place a plate in a large saucepan, put the jars on the plate, and fill the pan with water so the jars are covered. Bring the water to a boil and keep it boiling for 10 minutes.
- Boiling water This simple and effective method should be done right before bottling.
- Dishwasher If your dishwasher has a high-temperature setting or is a steam dishwasher, you can run a rinse or minimum wash cycle with clean, cold jars.
Do I need to sterilize my jam before eating it?
This question is a high debate in jam circles (don't get mad at me!) but I don't sterilize my jam before eating it. The main reason is sterilizing kills off the antioxidants and nutrients that fresh, homemade strawberry jam offers, and two, it tastes the best freshly made! The third reason is fresh homemade strawberry jam lasts about two seconds in my house before it's consumed so there's no need to let the jam sit in a hot water bath.
But if that's your jam (see what I did there?) simply:
Place a rack in the bottom of a large stockpot and fill it halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes. Remove the jars from the stockpot and let rest several inches apart, for 12 to 24 hours. Store in a cool, dark area.
