🍓 How To Make Strawberry Jam At Home

Prep Step: Place a small plate in the freezer. Will use this later in the recipe.

Cut the strawberry in half and then into quarters. These quarters can be used in fruit salads or frozen and added to smoothies.
    1. Step 1: Place the strawberries on a cutting board with the top facing down and use a paring knife to cut thin slices from one side of the strawberry to the other. You can also cut the strawberries into fours.
using a potato masher, mash the strawberries
    1. Step 2: In a large mixing bowl, mash the strawberries using a potato masher until they become crushed strawberries.
Next add the fresh squeezed lemon juice to the mashed strawberries
    1. Step 3: Next add the freshly squeezed lemon juice to the mashed strawberries.
add the white cane sugar to the strawberry lemon juice mixture
    1. Step 4: Add the white cane sugar to the strawberry, lemon zest, and lemon juice mixture and mix well until combined.
Combine mashed strawberries, sugar, and lemon juice in a heavy-bottomed saucepan; stir over low heat until sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Continue to boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C).
    1. Step 5: Transfer the strawberry mixture to a large saucepan or stockpot and stir over medium heat until sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Continue to boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). (Use a candy thermometer to check the temperature)
Continue to boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C).
    1. Step 5 Continued: Use a candy thermometer to check doneness. If the homemade strawberry jam reaches 220 degrees F (105 degrees C) then it's ready. Let it continue to simmer for 10 minutes.

Step 7: Check the doneness of homemade strawbery jam after 10 to 15 minutes by dropping a small spoonful of jam onto a frozen plate. Let sit for 1 to 2 minutes; if the jam appears to gel, it is ready. Continue cooking if jam appears thin and runny.

Step 8: Transfer homemade strawberry jam into hot sterile jars, filling to within ¼ inch of the top. Top with lids and screw rings on tightly. (See Pro Tip card below for stealizing Jam Jars) Place your Strawberry Jam in the fridge for up to a week or enjoy right away!

Pro Tip For Sterilizing Jam Jars (Water Bath Canning)

    • Water bath Place a plate in a large saucepan, put the jars on the plate, and fill the pan with water so the jars are covered. Bring the water to a boil and keep it boiling for 10 minutes.
    • Boiling water This simple and effective method should be done right before bottling.
    • Dishwasher If your dishwasher has a high-temperature setting or is a steam dishwasher, you can run a rinse or minimum wash cycle with clean, cold jars.

Do I need to sterilize my jam before eating it?

This question is a high debate in jam circles (don't get mad at me!) but I don't sterilize my jam before eating it. The main reason is sterilizing kills off the antioxidants and nutrients that fresh, homemade strawberry jam offers, and two, it tastes the best freshly made! The third reason is fresh homemade strawberry jam lasts about two seconds in my house before it's consumed so there's no need to let the jam sit in a hot water bath.

But if that's your jam (see what I did there?) simply:

Place a rack in the bottom of a large stockpot and fill it halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes. Remove the jars from the stockpot and let rest several inches apart, for 12 to 24 hours. Store in a cool, dark area.

Can you make strawberry jam without pectin?

    • Yes! We do not use pectin in this recipe, but instead use fresh lemon use. The lemon juice replaces the pectin and it's something most home cooks have in their kitchens!

Does homemade strawberry jam need to be refrigerated?

    • Yes! Refrigerate your homemade strawberry jam right away. It helps it last longer and it helps to maintain the jam's firmness making thick jam. Homemade strawberry jam that's nice and thick is perfect for adding to English muffins or topping vanilla ice cream.

I love homemade jams. My mom did a lot of canning. We had a cold room full of preserves and pickles. Strawberry was always my favourite.
