BLUBERRY LAVENDER POPSICLES WILL HELP BEAT THE HEAT
This summer has been a whirlwind of trips, hard work, nose-to-the-grindstone plotting, and plugging along like no other. I’m blown away by how fast this summer has flown by and just like that we are already at the beginning of August.
Can we start summer over? No way is it nearly Labor Day weekend. This summer has been filled with many transitions and lots of changes.
I had to make some hard decisions this season and let go of some really toxic people in my life.

STRESS LESS WITH BLUEBERRY LAVENDER POPSICLES
Transitions are hard. Letting go is hard. Moving on is hard. But all worth it, if it means your life will be lighter and less stressful.

ANXIETY RELIEVING BLUEBERRY LAVENDER POPSICLES? YES PLEASE
Enough about me, let’s move onto these delicious lavender yogurt pops. These gems are perfect for these last, hottest, dog days of summer. Does anyone know why they call it the dog days of summer? I’ll have to Google it.

These bright popsicles are a cinch to make and you only need 4-ingredients. All you’ll need to make these popsicles are culinary-grade lavender, fresh blueberries, honey, and coconut milk.
You’ll need Popsicle molds, which I’ve linked below.
THE BEST POPSICLES AND EASY TO MAKE AND EASY TO STORE
Stash your Popsicle molds in the freezer to get super cold while you make these juicy popsicles.
Next, we are going to make a blueberry compote. This is super easy to do. All you’ll need for this is a saucepan, 1-tray of fresh blueberries, dried culinary grade lavender, and a cup of honey.
Use more or less honey, depending on your sweetness preference. See instructions for making the compote in the recipe description below.
For the various layers in the blueberry lavender popsicles, get creative with it.
For some, I added the coconut milk layer first, and then added a layer of the blueberry mixture compote and so on.
Next, add another layer of coconut milk. If you want layers with straight lines, you can freeze each layer separately for a half-hour in the freezer before adding the second layer.
FREEZE THE POPSICLES OVERNIGHT FOR BEST RESULTS
This is somewhat time-consuming and I recommend letting the layers do their thing. Plus, by letting each layer mold into the next, you get these really cool tie-dye-looking popsicles, which I personally love.
You could also use Greek yogurt for this recipe in lieu of coconut milk and that means this recipe is cooking light.
Lavender blueberry popsicles area dreamy, healthy summer dessert!
Make sure to use full fat coconut milk for this recipe. You could even turn this into a blueberry ice cream recipe! All you would need to do is make a yogurt mixture out of coconut milk and Greek yogurt.

BLUEBERRY LAVENDER POPSICLES (Dairy-Free)
Ingredients
- 1 set popsicle molds
- 2 cups unsweetened coconut milk
- 2 cups fresh blueberries
- 1 cup honey
- 2 tablespoon lavender syrup
- 1 cup water
- 2 tbsp culinary grade lavender buds
Instructions
- Put your popsicle molds in the freezer for 10-minutes before making the recipe. This will help everything get cool faster.
- In a saucepan combine the blueberries, honey, lavender syrup, lavender buds, and water.Simmer the compote on low for 15-minutes.
- Once the compote is done, remove from heat and let cool for 5-minutes.
- Add 1-layer of unsweetened coconut milk to each popsicle mold.
- To make the second layer, add in the blueberry compote and repeat this process until your popsicle molds are full. You can get super creative with it as I did, and add as many layers as you want. You could also do full blueberry popsicles if you like.
- Freeze for 6-hours or preferably overnight. Soak the popsicle molds in warm water for 10-15 when ready to eat seconds and enjoy!
