- 1 cup All-Purpose Flour
- 2 Large Eggs
- 1 cup Buttermilk
- 1 cup Cornmeal
- 1 cup Extra-Virgin Olive Oil, for frying
- Ranch Dressing for dipping sauce and serving
Instructions
- Slice the tomatoes. Slice the green tomatoes into even rounds, about ¼-inch thick.
- Season the tomatoes. Arrange the tomato slices on a cutting board or baking sheet and season both sides with the sea salt and black pepper.
- Set up the breading station. Add the flour to one shallow bowl. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine the cornmeal and breadcrumbs.
- Bread the tomato slices. Working one slice at a time, coat each tomato in flour and shake off the excess. Dip it into the egg and buttermilk mixture, then coat both sides thoroughly in the cornmeal and breadcrumb mixture.
- Heat the oil. Add the extra-virgin olive oil to a large skillet and heat over medium heat until hot.
