Can you guys believe it’s almost Halloween? I can hardly believe it myself. This month has flown by! Better yet, this entire year has flown by. I feel like it was just last month that I was promoting my cookbook, but in reality that was a year ago. My how time flies. I wish there was a button to put pause on time. Maybe they’ll invent that for the time space continuum. A girl can dream right? I swear the older I get the faster time flies. Does anyone feel this way? This morning I was thinking about how it’s nearly November. Nearly the holidays and all of the hustle and bustle that goes along with that.
Do you guys have morning routines? I’m proud to report that I’ve finally solidified a morning routing and I’m pretty excited about it. I wake up everyday around 8am, and today I woke up at 7:44 am so I’m getting closer and closer to 7am each morning. 7am is my goal time to wake up. It was funny because Shane and used the restroom at In-and-Out on our way to the the apple orchards and the line through the driveway was insane. I immediately turned to him and said, how can people eat this at 11:30 in the morning? And he replied back, most people don’t consider 11:30 am breakfast time. It’s certainly still in the brunch hour to me.
What do you guys consider a decent hour to eat breakfast? What’s the earliest you’ll eat lunch? I drink coffee all day so maybe I’m biased. I certainly don’t hold it the morning hours only. This coffee recipe is super easy and fun to make. I used a blender to make my milk nice and frothy. This is a great option if you don’t have a milk frother. All you have to do is throw all of the ingredients into the blender, including the coffee and blend for two minutes on high. After, you’'ll have delicious pumpkin spice coffee.

Pumpkin Spiced Coffee

Make this delicious pumpkin spiced coffee any time of the year using fresh pumpkin, dark roast coffee, collagen, half-n-half or coconut milk, and delicious spices! This is an easy way to make the most delectable coffee that’s also healthy. With a full serving of fiber and protein per cup, you’ll want to make my magical pumpkin spiced coffee every morning!

Ingredients:
- 2-cups freshly brewed dark roast coffee
- 1-cup organic pumpkin puree
- 2-scoops unflavored collagen
- 2-teaspooons cinnamon
- 2-teaspoons pumpkin spice
- 2-teaspoons nutmeg
- 2-tablespoons honey (use as much or as little as you prefer for added sweetness.)
- 2-teaspoons vanilla extract
- Whole Milk or Coconut Milk if you are dairy-free
Instructions:
- Make sure you have fresh coffee made.
- Place the pumpkin puree, unflavored collage, cinnamon, pumpkin spice, honey, vanilla extract, and whole milk in a blender. Once your coffee is brewed, add it to the blender.
- Blend all of the ingredients on high in the blender for 3-4-minutes until you see a layer of foam form.
- Pour your creamy coffee into coffee mugs, top with nutmeg and enjoy!
