Hi friends! I've been missing in action around here spending night after night writing my cookbook. The good news is though, I'm almost done! I'm so grateful and excited for this amazing opportunity, but even more excite to be nearly finished! This is just a quick updated to let you guys know how everything is going and to share this recipe with you. This recipe got so many hits on Instagram and requests that I decided to take a break from writing to hop on here and get this to you guys asap! So without further adieu here is this delicious, creamy, vibrant smoothie bowl!
Make this refreshing treat this weekend because it's going to be over 100-degrees here. The first day of summer is here with a bang! I think technically today is the second day of summer, but to be honest this entire week has been a complete blur. I desperately need some sleep and a lot of water because this heat has been getting to me on my daily outdoor trail runs. One of the best things about this Lavender Acai Collagen Smoothie Bowl is that it's chalk full of electrolytes with all of the coconut water that's in the smoothie.


Another wonderful thing about this smoothie is it's actually an anti-anxiety smoothie. It's got edible lavender buds and lavender helps easy an anxious mind. I love adding to lavender to everything. I sometimes even add it to my bulletproof coffee. This smoothie also has a heaping does of Turmeric to ease inflammation and help build up your immune system. Turmeric is wonderful for boosting the immune system and fighting off disease.
So short and sweet, but I promise to be back with regular content starting next week. In fact, writing this cookbook has inspired me to take my blog to the next level and I'm ready and excited about it!

LAVENDER ACAI COLLAGEN SMOOTHIE BOWL
This is a delicious and beautiful smoothie bowl made with collagen and lavender. It’s a refreshing treat for a hot day and perfect for the first day of summer!
Makes: 4 servings
Prep time 5 mins
Cook time: 10 minsIngredients:
- 1 unsweetened acai packet
- 2 tablespoons coconut oil
- 2-scoops collagen peptides
- 1 cup wild blueberries
- 1 cup strawberries
- 1 cup coconut water
Toppings¾ cup edible dried lavender1 tablespoon nut butter1 tablespoon unsweetened shredded coconut1 tablespoon of micro greensSlice strawberries, blueberries, and sunshine raspberriesInstructions:
- Place all the ingredients except for the toppings into the blender and blend on high until creamy and smooth.
- Add as many or as little toppings as you like. This smoothie bowl will keep in the fridge for up to two days.
