Hi friends! I've only taken a week "off" but it feels like forever! I've been working like a busy bee writing my new cookbook and working hard to sell everything we don't want anymore. Need an easy dessert recipe? I've got you covered. My avocado chocolate Mousse is as easy as it is delicious! You only need a few ingredients and an electric mixer. You could also use a hand mixer for this too, but I don't suggest hand mixing as that will take a lot longer than using an electric mixer. I've never tried using my blender to make chocolate mousse, but I've heard it works if you are in a pinch. This chocolate mousse will keep in the fridge for up to 5-days in a glass, airtight container. If you don't want to add the fruit, simply leave it out. There are so many variations on how to make mousse, so don't be afraid to get creative with it. Do your thing! I've only ever made mousse using heavy whipping cream. so I cannot say whether or not a dairy-free variation would work. This recipe is indulgent, but still low in sugar compared to a lot of mousse recipes out there. But remember, it's a yummy treat so relax and have fun with it!
This week has been crazy with the unexpected loss of two well know celebrities. Both, whom to the outside lived perfect lives, but don't let the hoopla trick you. We never truly know what is going on in someone's mind, which is why it's important to check in with everyone. All of your friends and family, even the ones who look like they have it all together. You never know when you may be saving someone's life, simply by asking if they are okay.
With all that being said, go make this mousse for a good friend, relax, take some time off, and have a nice chat. We all need a nice conversation. Good food and good conversation helps in dark times.

AVOCADO MOUSSE
Easy, creamy, avocado mousse with a twist!

Makes: 6 Cups
Prep time: 5 mins
Cook time: 5 minsIngredients:
- 2 whole avocados
- 2 cups heavy whipping cream
- 2 tbs of cacao powder (Use as much as you want!)
- 1 cup pitted cherries
- ¾ cup honey
Instructions:
- Place pitted cherries, avocados halves, honey, cacao powder into an electric mixing bowl
- Next, add the heavy whipping cream and mix on the medium setting for five minutes until mousse starts to thicken
- Whip on high for an additional two minutes. You’l l know it’s done when the mousse is nice and thick. Place in tall glasses and garnish with fruit, if desired.
- The mousse will keep in an airtight container for up to 5-days
