I don’t know about you guys, but I get hangry when I don’t have breakfast. I literally have to be reminded by my husband to eat too because I wake up, make coffee, and get straight to work. (Must be the workaholic in me) but if I’m not reminded to eat breakfast, I’ll forget and then by the time 2pm rolls around I’m hangry times a thousand and am like the character in Little Shop of Horrors Feed Me Seymour. Yeah you know the one.
I was super excited when Lantana asked me to feature their delicious fruit hummus in some recipes. Fruit hummus? I’m all over that! Any excuse to mix dessert with breakfast please. Can I get an amen? You won’t forget to eat breakfast with my delicious, easy Cherry Blackberry Balsamic Brioche French Toast. Sounds fancy? It’s fancy, but easy to make and tastes divine. It’s one of those meals that will transport you to a fancy restaurant or a an epic vacation day.
Picture this: You’re sitting on a warm beach, feeling the sand between your toes, and drinking a glorious cup of coffee. You look down at your plate and see this beautiful french toast stuffed with Lantana Cherry Fruit Hummus and topped with blackberries, cherries, and homemade whipped cream. Sounds divine.
I did a poll recently Instagram stories on which Saturday feel-good-morning breakfast is a must-make and I think we can all agree that French toast is in the top three. What I love about Lantana’s Fruit Hummus is it can go on literally anything. Want to add mix sweet and savory together? Spread it over crackers. Want to spice up your morning coffee? Mix a heaping scoop of Lantana Cherry Hummus into your coffee with cream or almond milk and blend it up in the blender. So yummy! Don’t knock it until you try it because it’s surprisingly tasty!

Cherry Blackberry Balsamic Brioche French Toast

Ingredients:
- 8-ounces Lantana Cherry Hummus
- 1-package Brioche Bread
- 3-eggs
- Spices: 1-teaspoon cinnamon, nutmeg, cardamom, Himalayan sea salt, and pumpkin spice.
- 1-tablespoon of Vanilla extract
- 1-cup half-n-half or almond/coconut milk if you are dairy free
- 1-tablespoon of grass-fed butter
- 2-cups fresh blackberries (Reserve half for Balsamic Maple Glaze.)
- 1 -cup frozen cherries
- 1-cup balsamic glaze
- 1-cup maple syrup
- Fresh whipped cream, optional
Cherry Hummus Stuffed French Toast Instructions:
- Preheat oven to 250-degrees .
- In a medium mixing bowl, beat together the eggs, spices, salt, vanilla, and half-n-half.
- Take a piping bag and fill it with the cherry hummus. Make a small slice into the side of each slice of the brioche bread. Pipe the cherry hummus into each slice of the brioche bread. (Don't have a piping bag? See instructions below the recipe for how to make your own piping bag.)
- Heat a lightly oiled pan using some of the grass-fed butter over medium-high heat.
- Dunk each slice of brioche bread in the egg mixture, soaking both sides twice. Make sure you soak both sides of the bread twice for all of the flavors.
- Place each slice in the pan and cook until both sides are golden. Repeat this step until all slices of bread are cooked.
- While other slices of bread are cooking, put the cooked French toast on a baking sheet in the oven to keep warm.

Balsamic Maple Syrup Glaze Instructions:
- In a saucepan over medium-low heat, combine fresh blackberries, maple syrup, and balsamic glaze together until the thickened compote syrup forms.
- Top the stuffed French toast with fresh blackberries, frozen cherries, and drizzle with the balsamic, maple syrup glaze. Add more butter and fresh whipped cream to each slice if desired.
