    One Pot Chicken And Rice Curry

    Need an easy recipe for nights when you don’t feel like cooking? My One Pot Chicken and Rice Curry is easy to make, dairy-free, full of protein and veggies, and is wonderful to make as a food prep meal. All you need for this recipe is a Dutch oven, chicken, rice, and some fresh ingredients for the easiest weeknight meal ever!

    I remember the first time I had Chicken Curry. It was at my middle school best friend’s house and I immediately fell in love with the taste, texture, and the aroma. My friend’s mom made us a huge batch and before that I had never heard of chicken curry. When she brought out pates of rice with heaping piles of gorgeous bright yellow and orange chicken curry I was immediately hooked.

    Chicken curry has such a vibrant smell and is a total comfort food. Have you ever made chicken curry with bone broth? I was so excited when LonoLife asked me to create an easy recipe for them featuring their delicious Thai Curry Beef Bone Broth. This One Pot Chicken Curry is easy to make, dairy-free, and makes a wonderful food prep meal. It’s also great for those nights when you don’t feel like cooking. Did I mention it’s delicious?     Bone broth has been around for centuries and is a true super food. There are many benefits to eating this wonderful elixir and cooking with it is even better. Did you know that you could even add bone broth to your morning coffee for an energizing pep in your step and an added collagen boost. Enriched bone broth helps with digestion, is high in protein, is chalk full of essential amino acids that are also found in dark leafy greens, like glycine, proline, and lysine. Bone broth can also help strength hair, skin, nails, and bones.

    Now I’m all about easy dinners. There are many a nights when I’ve been cooking in the studio all day and the last thing I want to do is cooking dinner. That’s why one pot meals are the best option for those nights when cooking is the last thing on your mind. All you’ll need for this recipe is a Dutch oven, a pound of chicken, rice, LonoLife’s Thai Curry Beef Bone Broth, and some fresh veggies. You literally add everything to the Dutch oven and let it simmer away. And before you know it, you’ve got a delicious dinner on your hands. My one pot chicken and rice curry also makes a wonderful food prep meal. It will be keep fresh in a glass, airtight container for up to 3-days. Simply reheat it in the oven when you are ready to eat it. Easy and takes the stress out of what to make for dinner that night.

    I’ve also created a recipe video for this recipe that can check out here. Chicken and rice curry is such a fun a recipe because you can add whatever veggies you want to it. I added rainbow bell peppers, chopped garlic, and used fresh basil as a garnish. The fresh basil really makes all of the flavors pop! You could also add broccoli, zucchini, and squash.

    One Pot Chicken And Rice Curry

    Need an easy recipe for nights when you don’t feel like cooking? My One Pot Chicken and Rice Curry is easy to make, dairy-free, full of protein and veggies, and is wonderful to make as a food prep meal. All you need for this recipe is a Dutch oven, chicken, rice, and some fresh ingredients for the easiest weeknight meal ever!

    Makes: 6-8 servings

    Name of image (title of post is fine)

    Prep time: 10-mins

    Cook time: 1-hour

    Ingredients:

    • 2-tablespoons Extra Virgin Olive Oil
    • 1-cup diced red onion
    • 1-teaspoon fresh chopped ginger
    • ½-cup chopped celery
    • 1-pound organic chicken tenders
    • 1-cup chopped rainbow bell pepper or red bell pepper
    • 2-scopps LonoLife Thai Curry Bone Broth
    • 1-teaspoon each of Himalayan sea-salt and black pepper
    • 3-cups water
    • 1-teaspoon curry powder
    • 1-cup coconut milk
    • 4-cups uncooked Jasmine rice
    • ½-cup chopped fresh basil for garnish.

    Instructions:

    1. In a Dutch oven on the stovetop over medium heat, add the EVOO, chopped red onion and ginger and simmer for one minute.
    2. Add the chicken and celery to the Dutch oven and stir until the chicken starts to turn white.
    3. Add the bell pepper, Himalayan sea-salt and black pepper, and stir again, simmer for another minute.
    4. Add the LonoLife Thai Curry Bone Broth and stir.
    5. Next, add 3-cups of water to the Dutch oven and stir continuously until everything is combined.
    6. Add the curry powder and coconut milk and stir.
    7. Next, slowly fold in the uncooked Jasmine rice and stir. Cover the Dutch oven and let the chicken and rice curry simmer over medium-low heat on the stovetop for up to one hour or until the chicken and rice is nice and thick.
    8. Garnish with fresh basil, optional.
