Breakfast Sandwiches are super fun and easy to make, especially the make-ahead kind! These sandwiches are delicious, nutritious, and will give you an easy breakfast option that freezes and reheats well! Packed with protein and a meal that will keep you full for hours.
MAKE BREAKFAST MANDATORY
For anyone that knows me, knows I have to have breakfast in order to be a functioning human being. Other meals are important, but if I don’t have breakfast I’m not fun to be around. My make-ahead breakfast sandwiches are easy to make and make a great on-the-go option.
I love real food and I’m not a fan of the packaged stuff. And with the exception of a certain chips brand that I adore, I actually work really hard to only eat whole, healthy foods. I also love protein and I think it’s essential to have for breakfast.
PACK IN THE PROTEIN FOR AN EASY MEAL OPTION
I find that protein is the best option for a healthy breakfast. My breakfast sandwiches have eggs, bacon, cheese, and you can add any toppings you want like mayo or ketchup. These sammies are a great option for on-the-go meals that you want to food prep on the weekend and have to enjoy all week long!
Simply reheat these breakfast sandwiches in the oven or in the microwave if that’s your jam. I love that these have layers of deliciousness, but are still a healthy meal option. I even like heating them up as a lunch option too! Simple and delicious.
These breakfast sandwiches are made with scrambled eggs, fresh bacon, sliced sharp cheddar cheese, and freshly baked biscuits. Now, if you are really motivated you could make your own biscuits from scratch, but I opted for the store-bought kind. Do whichever suits you and your family need’s best.
FOOD PREP LIKE A CHAMP
I’m all about that food prep life. I like to have my meals planned out for those days where cooking feels like work. I also think it’s perfect to have your first meal of the day ready to go so that you don’t have to think about what to cook.
I know that thinking for me first thing in the morning before I’ve had my coffee is hard.
I love having a meal that’s easily prepared and can be made quickly while still being healthy. I also love having breakfast with my coffee because not only my mind works better, but my digestive system is happier too.
MAKE A DAILY PLAN AND STICK TO IT
It’s hard these days to find faith in the unknown and I think right now having a plan is the best way to go. I saw this post on Instagram earlier today where it suggested to chart out plan blocks and highlight the most important to the least important.
The photo also suggested to only list 3-6 items in the plan blocks so that you don’t get overwhelmed. I think this is a wonderful idea for everyone right now and it’s super easy to do!
For example, in one of my plan blocks, I would list food prep and in another plan block, I would list do a blog post, and then exercise. These are three tasks that I can easily do and are completely manageable.
I find when I overload my day with tasks, I get overwhelmed and cranky. This way, I can accomplish my top three tasks of the day and feel accomplished.

THIS WEEKENDS TO-DO LIST
This weekend is Shane’s birthday and while we are unable to do what I originally had planned for him, we still have some fun stuff planned. Although, to be honest, I really think he wants to have the day to himself since he’s been working a ton of overtime lately.
I have plans to keep my annual spring purge going as well as repotting my Birds of Paradise plant. This poor plant that I’ve had for nearly ten years is stressed and it’s completely root-bound. She needs to be repotted to a bigger pot asap.
I plan on heading to Lowes to buy some potting materials and finally, do what I’ve been meaning to do since 2020 started.
I also plan on going on a lot of runs this weekend. I’m loving the hot weather we are having in California and running, much like cooking is such a stress reliever for me.

Breakfast Sandwiches Make Ahead
Ingredients:
- 1 (16.3 ounces) can Pillsbury® Grands!® refrigerated biscuits
- 1-package of nitrate-free bacon
- 6-slices of sharp cheddar cheese
- 6-eggs scrambled eggs
- ½-cup half-n-half
- 1-teaspoon onion salt
- 1-teaspoon Himalaya sea salt
- 1-teaspoon black pepper
Instructions:
How to cook Breakfast Sandwiches Make Ahead
- Bake the biscuits according to package directions or make your own biscuits from scratch.
- Cook the bacon in the oven on a lined baking sheet at 350-degrees for 20-25 minutes until crispy. This method of cooking bacon will give you the crispiest, delicious bacon.
- Scramble the eggs. Wisk the egg yolks, ½-cup half-n-half, onion salt, sea salt, and black pepper. Scramble the eggs on the in a greased pan over medium-high heat until cooked through.
- Split warm biscuits; top-bottom half of each with scrambled eggs, bacon, and cheese. Cover with top halves of biscuits.
- Add any toppings of choice.
- If you are freezing these breakfast sandwiches for food prep store them in an airtight container in the freezer or enjoy immediately!
